The "Desperation Dinners" book(s) would probably work very well for you. They are all meals which can be prepared in 20 minutes or less (unless you need to boil water or preheat an oven, which in their opinion doesn't count because you start that while you're changing work clothes and letting the dogs out to pee and stuff). And part of the reason each meal goes together so quickly is that they use a lot of pre-prepped ingredients - canned beans, seasoned diced tomatoes, things like that. This also means that a lot of the flavor to the dish is imparted by the major ingredients themselves - not a whole lot of fiddling with spices and herbs and such. So it's really hard to "ruin" the flavor of the dish because you thought the recipe called for three TABLESPOONS of dried dill weed. =)
If they still print "The Starving Student's Cookbook", that stuff is really easy, and of course inexpensive, but some of it looks a little weird to me.

I recommend The Four Ingredient Cookbook by Linda Coffee and Emily Cale. This book features easy meals with few ingredients, as well as a section on healthy cooking. I use it often; less ingredients to mess up. I also use Meals in Minutes published by The Gooseberry Patch. It's easy to read, and clear to understand the cooking directions.
Don't worry...cooking isn't for everyone, and it just takes some of us a while to catch on! (Like me)

Get a Betty Crocker cookbook. About 95% of the recipes in there are "normal," meaning they're something you can theoretically cook every day--no expensive, fancy ingredients. :) They do have a few fancy ones, and ones that are very time consuming (albeit easy), but for the most part, they have baked chicken with vegetables, meat loaf, fried chicken, arroz con pollo--just basic, everyday food. Every woman in my family has had a Betty Crocker cook book since the beginning of time practically, lol, and we're all terrific cooks. Although, my great grandmother taught my grandmother, my mom and me how to cook, so maybe that has something to do with it too. ;)

I totally recommend the TASTE OF HOME COOKBOOK. It is called the Cadillac of cookbooks. You will love it. There are pictures for everything. Easy to follow recipes for simple to elegant dishes. There are diagrams that explain different cuts of meat. Definitions for cooking techniques. Troubleshooting tips. Loads of stuff. The book runs about 25 dollars but is worth it because inside contains a free subscription to their magazine on top of it. The recipes are tried and true by cooks all across the country and are often featured in the Taste of Home Schools. I really love it. They also have a TASTE OF HOME BAKING BOOK devoted to strictly baking although there are desserts, bread recipes in the cookbook too. Happy Cooking!

The " Joy of Cooking " is great. It explains the hows and whys to assist you for a particular recipe and the info will help you next time because you have learned why you should do certain things in cooking. Authors Irma Rombauer and Marion Rombauer Becker. You can do it !

There must be one of those books like "Cooking for Dummies" or "The Idiot's Guide to Cooking". Those kind of introductory books are usually quite helpful, at least for the topics that I have used them to read up on.
