SAVORY MARROWS

How to make savory marrow:
If you have a glut of marrows in the garden here is a filling main dish to have Savory Marrow.


Ingredients

1 large summer vegetable marrow
2 cups ground cooked meat
3 bacon slices
1 small onion
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoon bread crumbs
1 teaspoon chopped parsley
2 tomatoes
stock
2 tablespoons dripping
(see measure conversions for more information)


Method

- Cut the marrow through about 2 inches from the end.
- Remove the seeds and pulp.
- Peel the large piece of vegetable marrow and boil for 5 minutes.
- Mince the meat, bacon and onion and mix with flour, salt and pepper, breadcrumbs and parsley.
- Skin and chop the tomatoes and add to the mixture and moisten with a little stock.
- Stuff the marrow with the mixture and replace peeled, cut-off end.
- Put in an ovenproof dish, dot with dripping and bake at 180 degree centigrade (see temperature conversions) for approx 1 hour, basting frequently.
- Serve with plenty of gravy, runner beans and new potatoes.

1. Baked marrow
Cut in half lengthways
Scoop out the central portion so that you have a boat-shaped marrow left.
Mash the marrow you have scooped out and mix with one of following:
- cheese and onion
- minced meat and onion
- cheese and cooked potato
- mushrooms and natural yoghurt
- sweetcorn and tuna
to taste
Then put that mix back in the middle of the marrow and bake it.

2. Spicy marrow slices
Slice marrow thinly.
Mix indian spices, rock salt and pepper in a dish.
Dip the marrow slices in oil.
Dust or coat the marrow slices in the seasoning mix, to taste.
Cook on baking sheet at top of hot oven for 4-10 minutes depending on thickness of slices.
You can mix the marrow slices with slices of aubergine treated the same way.

I was going to suggest a soup since we often make stews with lamb bone marrow. Then I looked at the other answers and realized that marrow must be some kind of fruit that I have never heard of. Even stranger the world that has heard of it seems to be divided into those that hate it and those that love it. I am glad that I butted out of that.

Marrow Chutney


3 lbs marrow ½ lb sultanas
1 lb apples ½ lb stoned dates
1 lb onions 1 tsp salt
2 lb Demerara sugar 2 oz dried root ginger
3 tbsp mixed pickling spice 1 pint vinegar

Method
Peel marrow and remove pips and pith.

Cut into small cubes (½inch).

Prepare and roughly chop apples, onions and dates.

Place pickling spices and ginger in muslin bag and secure.

Place all ingredients in a preserving pan.

Simmer gently till thick and brown (about 1½ hours).

Cool slightly, squeeze juices from muslin bag and mix well in.

Pot and cover.

Cut off one end
scoop out all the core
fill it with sugar
put the end back on
put it in a stocking un-cut end first
hang the stocking with cut end uppermost
put a bowl underneath
In about a month you'll have a version of moonshine
enjoy in moderation

Simmer in plenty of water 3-5 hours. You now have the beginnings of soup, gravy, sauce etc. Add onions, celery, and carrots for a flavorful stock

stuff them....lovely.
bake them in the oven ...scoop out the insides and mix with wotever u like...put back in the marrow and sprinkle with cheese of your choice and put back in the oven....Mmmmm

It's lovely raw in salad, try it if you don't believe me! It's best just lightly cooked with salt and pepper. Also very good stuffed and baked, but that's about all I can think of.
