Fry them or pickle them.
GREEN TOMATO PICKLE
2 qt. green tomatoes
2 hot peppers, chopped
2 c. onions, chopped
1/2 c. pickling spice, tied in bag
2 qt. vinegar
1/4 c. salt
3 c. sugar
Combine all ingredients. Place over medium heat and bring to boiling point. Simmer for 30 minutes. Remove spice bag. Pack in jars and seal.

This is the Southern method for frying green tomatoes:
Fried Green Tomatoes
4 to 6 green tomatoes
salt and pepper
cornmeal
vegetable oil
Slice the tomatoes into 1/4 - 1/2-inch slices. Salt and pepper them to taste. Dip in meal and fry in hot grease or oil about 3 minutes or until golden on bottom.

You can make green tomato relish, although I don't have a recipe. :(
You an also fry them. Take flour and add salt and pepper to taste. Heat some oil in a skillet on med-high, dredge the tomatoes in the flour and shake off excess. Fry a few minutes on both sides until golden. Drain on paper towels.
I don't know if you can can them or not. I love canning ripe tomatoes, but I don't know what you would do with green ones... Sorry.

GREEN TOMATOE JELLY
This is the easiest recipe for Jelly and it is sooo good.
5 cps minced green tomatoes
4 cps sugar
2 3-ox or 1 6-oz pkg. of jello (any flavor you want for jelly) Raspberry seems to be the most popular.
Boil tomatoes and sugar for 15 minutes. Remove from heat. Add Jello and stir well. Pour into containers and refrigerate till gelled. You can then freeze or give as gifts.
Another unbelievable recipe is Zucchinie Pie
You will not be able to tell that it isnt Apple.
You make your filling just as you would an Apple Pie only instead of apples you use chopped Zucchini. (Peeled of course).
Even my fussy husband didnt know the difference.

I make fried green tomato's with eggs flower and a buttered pan on the stove. Just beat as many eggs you need then cut up the tomato's like you would to put them on a sandwich,then dip the tomato slices in the egg then the flower (you can season the flower any way you want) when they're brown on both side's you're done, and don't worry if you still see some flower that's white,you can't cook it all.

Turn them stem side down in a cool dark place and they will ripen. Cut them up and make a delicious tomato sauce.
