Chocolaty Pancakes with Sauteed Bananas:

1 cup pancake mix
1 egg
1/2 cup Nutella (hazelnut-chocolate spread), at room temperature, or
3/4 cup whole milk
1/4 cup sour cream
1 tablespoon vegetable oil

2 tablespoons unsalted butter
1 pound sugar
4 bananas, peeled and cut into ¼-inch-thick slices ¼ cup maple syrup

Place the pancake mix in a large bowl. In another bowl, whisk together the egg and Nutella or chocolate. Add the milk, sour cream, and oil. Stir into the pancake mix and whisk just to combine. Let the batter rest according to the label directions. Place a nonstick griddle or skillet coated with oil, butter, or cooking spray over medium heat. Spoon 1/3 cup of batter per pancake onto the griddle. Turn when bubbles rise to the surface and the edges look cooked. Repeat with the remaining batter. Serve with topping.

In a medium skillet, melt the butter over medium-high heat. Add the sugar and cook, stirring, until the mixture begins to brown, about 2 minutes. Add the bananas and gently coat with the butter mixture. Cook until they begin to soften, about 2 minutes. Add the maple syrup and bring just to a boil. Stir gently and serve immediately

Yield: Makes 8 to 10 pancakes

Very simple. Use your favorite mix, and after flipping the pancake immediately drop several chocolate chips onto your pancakes. Serve with your choice bananas, strawberries, whipped cream etc.

After you've turned the pancake the first time, drop the chocolate chips into the batter side. They'll melt better that way.

Here's one I use with or without chocolate chips...

WHEAT PANCAKES:
1 large egg
1 c wheat flour
3/4 c milk
1 TBS packed brown sugar
2 TBS veg oil
3 tsp baking powder
1/4 tsp salt
1/2 c berries, chocolate chips, or nuts

Beat egg. Add rest of ingredients and mix until smooth.
May add 1/2 c berries, chocolate chips, or nuts.
Spray pan or use nonstick frying pan and preheat. Pour in small amounts onto hot pan. When bubbly flip and cook other side. Will cook fast.

1 1/4 C flour
1 T sugar
1/4 tsp. cinnamon
1 T baking powder
1/4 tsp. salt
2 eggs
1 C milk
4 T melted butter
3/4 tsp. vanilla
3/4 C chocolate chips

Preheat griddle or skillet.

Combine flour, sugar, cinnamon, baking powder and salt in a large bowl. Mix together liquid ingredients and beat into dry mixture until smooth. Fold in the chocolate chips. Pour 1/4 cup batter for each pancake onto hot griddle.

Cook until the bubbles that form on top begin to pop, before flipping, then cook a minute or so more.

Serve immediately topped with your favorite syrup.


1 cup all-purpose flour

1/4 cup miniature chocolate chip baking bits
1/2 cup honey
1/4 cup butter or margarine
1/2 to 1 teaspoon ground cinnamon
In one bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, combine the egg, milk, and oil.

Add the combined wet ingredients to the bowl of dry ingredients. Mix well and stir in chocolate chips.

Pour the batter by 1/4 cupfuls onto a lightly greased hot gridle. Turn when bubbles form on top; cook until second side is golden brown. Keep Warm.

Now, combine honey, butter and cinnamon in a small microwaveable bowl. Microwave, uncovered, until butter is melted and syrup is hot. Serve with pancakes.
