creamy and delicious, my honey loves this:
Chicken Tetrazini:
1/2 lb (8oz) spaghetti
1 lb boneless, skinless cicken breasts, cubed
1 med red bell pepper, chopped
2 c sliced fresh mushrooms
4 oz cream cheese, cubed
1/4 c flour
1 can(14oz) chicken broth
3 TBS Grated Parmesan, divided
1/2 c mozzarella, grated

Preheat oven to 350. Cook pasta as directed on package. Meanwhile, spray large nonstick skillet with cooking spray. Add chicken, peppers, and mushrooms; cook and stir 5 min or until chicken is no linger pink.
Remove from skillet; set aside. Place cream cheee, flour, and broth in skillet. Cook and stir with wire wisk until boiling. Reduce heat to medium low; simmer 5 min., stirring frequently. Drain pasta. Return to saucepan. Add cream cheese mixture and 2 TBS of the parmesan; mix well.
Spoon into 2 qt round casserole dish. Cover with foil. Bake 25 min. Top with mozzarella and remaining 1 TBS parmesan. Continue baking, uncovered, 2 min or until cheese is melted.

Carbonera
1 lb spaghetti
3 egg yolks
2 tablespoon heavy cream (or so)
some olive oil
3 shallots, sliced thin
2-3 cloves garlic, smashed and or minced
1/2-1 lb thinly sliced bacon, cut into squares
1/2 cup freshly grated parmesan cheese or romano cheese

Boil water for spaghetti as you normally would.
Mix egg yolks and cream together and set aside.
In a saute pan, place olive oil, bacon, and garlic, to cook over low heat, till bacon is crisp.
Make sure to cook the bacon very slowly.
When done, add shallots mix for half a minute or so, and pull from heat.
Drain pasta and place into a large pot or bowl.
Add bacon mix and toss once.
Add egg/cream mix and cheese, toss again.
These last three steps should be done very quickly to cook the egg mixture, and spread the cheese evenly.
Serve wilth freshly ground black pepper, a fresh salad, and a nice glass of wine.
My choice on wine is Johanisberg Reisling.

Alfredo

8 ounces cream cheese, cut in bits
3/4 cup parmesan cheese, grated
1/2 cup butter or margarine
1/2 cup milk
8 ounces spaghetti, cooked; drained

In large saucepan combine cream cheese, parmesan, butter and milk, stirring constantly until smooth.
Toss pasta lightly with sauce, coating well.
Leftovers freeze well.

5 saffron threads
1 (8 ounce) package cream cheese
1 1/2 cups cream
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon salt, or to taste
splash of milk

DIRECTIONS:
Warm olive oil in a large skillet over medium heat. Place the chicken pieces in hot oil; cook, turning, until browned on both sides. Stir in cayenne, white pepper, and garlic. Pour in water, and cook until the chicken is done and the water has evaporated, about 30 minutes.
Stir in butter and saffron threads; cook for 10 minutes. Add cream cheese, stirring until melted and smooth. Gradually whisk in cream, smoothing out any lumps. Stir in Parmesan, and cook until the sauce reaches the consistency you like. If it becomes too thick, stir in a small amount of milk.

4 (6.5 ounce) cans tomato sauce
1 (14.5 ounce) can diced tomatoes
2 bay leaves
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
salt and pepper to taste
1 (8 ounce) package spaghetti

DIRECTIONS:
In a large skillet, brown sausage over medium heat; drain and set aside.
In a large saucepan over medium heat, combine tomato sauce, diced tomatoes, bay leaves, Italian seasoning, garlic powder, basil, oregano, salt, pepper and Italian sausage; mix well.
Simmer over medium-low heat for at least one hour; it is best if simmered all day.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Mix sauce with hot pasta; serve.
