I'm not sure why it does it, though my guess would be because it dries out more. try adding a little bit of milk to the container and microwaving it with the lid sitting on top (but not sealed - no explosions please). This should help you have some tastier leftovers.

You may want to add a little water prior to heating. If you don't use real butter it might do that. Also try to use real cheese not the one that comes in the box.

Add a little milk to it and stir it in. Microwave it covered in a damp, not wet paper towel.

I always add a little sour cream to mac & chese, it makes it creamier. Also add a little milk when reheating.
