i would get them a pic frame engraved with the date of the knighting & ask someone in the church to give u some scripture to ties to the honor!

There is the Knights of Columbus which is a fraternal order of men that do good works and meet together every once in a while. Thes men are all lay people - they don't take religious vows. But other than that, the church does not "knight" anyone.
Make a donation to the persons favorite charity in their name, get them a set of rosary beads, a copy of the catechism of the catholic church or a prayer card. Or you could choose a gift certificate at a restaurant, or a starbucks card or maybe a bottle of wine.

Knights (KofC) provide a rosary to every knight. A good knight keeps it with him always. To become knighted (Sir Knight) is a MAJOR step for any man including Deacons, Priest, Arch Bishops, etc. The most famous knight would have to be JFK... I nice framed pic. of the virgin Mary or better yet a small garden statue of the Virgin Mary of Jesus would be most appropriate. S.K. Joe G

So you mean they're joining the Knights of Columbus?
I'd go with an engraved bible, cross jewelry, or some other symbolic gesture of this grand occasion.
