The easiest way (and get good results) is to get a gallon or five (depending on how much you want) of the natural style apple juice...the kind that comes in the 1 gallon glass jugs (be absolutely sure there are no preservatives in it). Then go the the local home brewing store and get a vial of english cider yeast (a white wine yeast will work, and is less expensive) and a #8 stopper with a hole in it. You'll also need some tubing that fits that hole, or get an airlock.

Have a small glass of the apple juice (you're making room and seeing how sweet it is). If it's really sweet, you're fine...if not, you can add some sugar. Cap the juice ad shake like mad...this aerates it. Toss in the yeast (in a little water if you used dry) and shake it up again...really well. Put the stopper in the top and fit the airlock or the tubing into the hole. If you used tubing, put the other end of the tubing into a small jar of water (this is a cheap airlock)

After a day or so, the airlock should be bubbling. This will continue for about a week to two weeks (slowing down as time goes by). When it stops bubbling, you want to siphon the cider away from the sediment on the bottom. Let this siphoned cider sit with an airlock on it for another 2 weeks. After that, it should be ready to enjoy. You can recycle the sludge from the bottom of the first batch to use on a second batch if you want.

There's a lot more to take into consideration, but when you're at the home brew store, ask about what you can do to improve the process...particularly with sanitizing.

Hot Spiced Cider


Ingredients

6 cups fresh apple cider
1/4 cup pure maple syrup (more or less, to taste)
2 cinnamon sticks
6 whole cloves
6 whole allspice berries
6 strips orange peel
6 strips lemon peel

Directions

Pour the apple cider and maple syrup into a large stainless steel saucepan. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.

Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.

Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving, if you like.

No tricks, you make it just like beer: put a load of freshly squeezed apple juice in a bucket, add yeast (beer or wine yeast will do), put on the lid, it's ready to drink in a week. Enjoy!

Loads of apples help and if you want to do it the traditional way..a few dead mice, rats, some mud a few tigs..greeeeeeeat stuff

you can buy home made cider kits,its great but gets you very drunk so take it easy.

crush apples through hessian cloth and leave to ferment for 3 weeks then gorge yourself. mmmmmmmmm

you will need an apple press. then ferment the juice. i used to make it..but its now cheaper to buy.
