Chicken Breasts with Creamy Vegetable Topping:
Red bell pepper, scallion, and carrot are sautéed briefly, then mixed with cream cheese to form a bright, speckled sauce that bakes right on the chicken--simple and delicious.
1 tablespoon cooking oil
1 red bell pepper, chopped
2 scallions including green tops, chopped
1 carrot, grated
8 ounces cream cheese, at room temperature
1 teaspoon salt
1/2 teaspoon fresh-ground black pepper
4 bone-in chicken breasts (about 2 1/4 pounds in all), skin removed
1. Heat the oven to 425°. In a medium frying pan, heat the oil over moderate heat. Add the bell pepper and cook, stirring occasionally, until starting to soften, about 3 minutes. Add the scallions and carrot and cook 2 minutes longer. Mix the vegetables with the cream cheese, 3/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper.
2. Sprinkle the chicken breasts with the remaining 1/4 teaspoons of salt and pepper. Put the breasts in a roasting pan and spread them with the vegetable cream cheese. Bake the chicken until just done, 20 to 25 minutes.
Menu Suggestions: The rich topping on the chicken leaves one wanting a simply prepared vegetable, such as steamed broccoli, asparagus, or green beans.
Variation: Chicken Breasts with Boursin-Cheese Sauce: Substitute a 5 1/2-ounce package of plain or garlic-and-herb-flavored Boursin cheese for the cream cheese.
Wine Recommendation: A crisp and fruity white will cut through the rich cheese and pair well with the acidity of the bell pepper and scallion. A kabinett riesling from the Mosel-Saar-Ruwer region of Germany or, if you can find it, a riesling from the Finger Lakes in New York is a good possibility.

Italian chicken breasts. Fill a crock pot with a few inches of spaghetti sauce, add the chicken breasts, pour the rest of the sauce over the top. Let it cook on low all day. When you get home, make some garlic bread and a salad and you have a very easy, very yummy meal!

Partially slice a chicken breasts (horizontally).I then normally put Philledelphia or any cream cheese in the gap. Then some bacon or chorizo sausage.
Put the chicken in some foil, add some olive oil herbs and seasoning.
Wrap the chicken breast in the foil and put in the oven on around 200 degrees for around 25 mins or until cooked.
Then you can have that with any side rice or potates and veg.

Everything! Here's an easy real good one. Put the chicken in the pan (corning ware if you have it) frozen, salt & pepper it. Bake it a couple hrs @ 350* til all the juices dry up and browns. Mix a can of cream of chicken soup with 1/2 can milk. Pour over chicken and bake another 30 mins. You can serve over noodles, rice or potatoes. You can add potatoes and carrots in with the soup if you like. Makes a wonderful gravy, very flavorfull!

I recomend pouring some salsa on the chicken, and bake it in the oven... Cook a vegetable, any that is your fav will do... I personally love chopping up zuccini, yellow squash, cauliflower and sauteing them with some garlic pepper sault... and make some rice with a little butter and minced onion to taste.... (and experiment of mine that was very good).... for dessert have angel food cake with strawberries and whip cream.
I love cooking. And always try new things, you never know if you like something until you try it!

My family loves this: Cut chicken breasts into bite sized pieces and fry in pan with oil. Add some garlic salt, pepper and what ever other seasonings you like. Add some fresh mushrooms, if you like and heat all together. Meanwhile, in a pot your boiling some spaghetti noodles. And in another pot, steaming broccoli. When noodles are done, put some on a plate with some butter and garlic salt. Top that with your chicken/mushroom mixture. And top that with broccoli. Sprinkle with freshly grated Parmesan cheese, and enjoy! Serve with garlic bread or sticks.....

I find chicken breast is rather tasteless+ boring...
The only ways I can be fond of them:
1) Chicken sandwich:
cut them thin and grill/fry in little oil, taste with salt, pepper+oregano, stuff them in french pita or normal bread with lettuce, tomatoes, cucumbers + parlsey
2) Fried Chicken:
cut them in not too small pieces, wash tem + pat them dry. In a bowl mix: flour, salt, pepper, chilli + sweet paprika powder, oregano + shake very well. Dip the chicken piece sin the flour-mix, then in beaten egg + again two more times in the flour.Let them stay for 10 min. and deep fry them.
