REAL PUMPKIN PIE
2 c. pumpkin, cut into half-inch pieces
1/4 cup liquid from cooked pumpkin
1 c. raisins, soaked in 1/4 cup dark rum
1 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 teaspoon cloves
1/2 teaspoon ginger
1 tbsp. molasses
1 tbsp butter
1/2 tsp vanilla extract
1 egg yolk, beaten
This recipe uses cubes of raw pumpkin rather than canned pumpkin. Winter squash may also be used.
In medium saucepan, add 1 tbsp. of butter and 1/2 cup water to pumpkin, and simmer over medium heat, which should take approximately 10 minutes. Drain, reserving 1/4 cup liquid. Mash or puree pumpkin. Add raisins, rum, cooked pumpkin, and remaining ingredients. Stir until well combined.
Turn into pastry lined 9 in. pie plate. Flute edges. Set in preheated 400 degree oven. Bake 15 minutes. Reduce heat to 350 degrees and bake about 30 minutes longer

If you are starting from scratch, STEAM the pumpkin to cook it, then mash it with a potato masher, and place it in a strainer so it can drain thoroughly.
Bake a single flaky crust, until it is a just browned.
Beat two eggs with 1/2 cup of evaporated milk, add 1/2 to 3/4 cups of brown sugar (depends on how much of a sweet tooth you have) and add a pinch of salt, 1/2 tsp each of cinnamon, ginger and nutmeg.
Blend together and pour mixture into pie shell. Return to oven and bake for about 1/2 hour at 350 degrees, or until the filling is firm and shows cracks. Remove and cool. Top with gobs of whipped cream (real whipped cream, not that stuff out of a can) and enjoy.
Keep telling yourself, as you stow away the calories, that pumpkin is a healthy vegetable and this is really good for you. That entitles you to have a second piece....

Pumpkin Pie:
2 cups prepared mashed pumpkin
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 cup brown sugar
1/4 cup maple syrup
2 eggs
1 cup evaporated can milk
pinch of salt
1 un baked pie shell
Combine all ingredients together mix well. Pour into pie shell
Bake at 450 for 10 minutes then turn oven down to 325 and
Bake for 40 minutes or until done

1 (14 ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)
2 eggs
1 teaspoon ground cinnamon

1 (9 inch) unbaked pie crust

DIRECTIONS:
Preheat oven to 425 degrees F. Whisk pumpkin, EAGLE BRAND, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

From scratch will require a pupmkin.. and in the end you may not like the way it looks... from scratch real pupmkin pies are kind of sick looking.. not the appetizing amber color we are used to.. . get a can of LIbby's pumkin.. and followi the recipe on the can.. you'll like that better..
