I have been casually dating (just dating) a woman for a month or so and the other day she asked me over to her parents for a Sunday dinner. I was a little surprised by this, but agreed. Do you think this is a strong hint that she may want more than dating and it's time for a more serious relationship?

Not necessarily a sign she wants something serious. Could be that she mentioned you to her parents and they said, hey, he sounds nice, let's invite him for dinner. You should ask her if you should read anything into it. You can bring it up in a tactful way, or just wait to see how the dinner goes. Chances are if she does want it to be serious, her parents will drop hints. Look for clues in what they say and their body language. If you can read them, it might be less awkward than asking your lady friend where things are going.

This is not a hint, this is a sure sign that she wants a serious relationship with you. I haven't brought anyone home to meet my parents unless I was sure they were going to be long term. If this is something you are not ready for, then you need to tell her now. Don't wait until after meeting the parents. That wouldn't be good for either of you.

Either her parents opinion or approval are very important to her or she wants to move on to a more serious relationship. Maybe both.

Yep, I'd say her mom has already chosen invitations & Dad wants to be sure your financial prospects are sound. lmao
Unless you steal the family silver or fart at the table, they're gonna approve of you as future son-in-law status!!

She wants you to meet her parents so she can get their opinion of you. Usually women don't want you to meet her parents unless they want to take it to the next level.
