You're correct. See ochef.com. This is the first time I heard of it though. I think it is safer to use both the date on the package and the buoyancy test. Also, even if the egg does pass the buoyancy test but seems dated, I would recommend using it for direct heat cooking only e.g. scrabbled eggs or something instead of a batter.

"There is a small air pocket in the large end of the egg. When the egg is fresh, the pocket is only about 1/8th of an inch deep and as large around as a dime. As the egg ages, however, it loses both moisture and carbon dioxide — shrinking — so that the size of the air space increases. And the size of the air space determines the buoyancy of the egg.
So if you submerge a very fresh egg in water, it will lie on the bottom. An egg that is a week or so old will lie on the bottom but bob slightly. An egg that is three weeks or so old will balance on its small end, with the large end reaching for the sky. And a bad egg will float. "

First by odour, second if you crack the egg, the white will be very running,check the yolk to see if its a bright yellow(good), or dull looking. Old eggs will look dull. Eggs if in thier container should be good for about two to three weeks. They will start to lost their fresness after that. Always keep them in the container.
A very important rule that i use is "When in doubt,throw it out" Never take chances with raw,bad eggs, or anything poultry related. Salmonella goes a long way.This is a good practice,especially if things are over three(3) days old.

The best way to check is to always crack the egg into a separate bowl before using it, then if it is bad it wont contaminate whatever else you were going to put in with.
Eggs are usually 6 weeks old when you buy them in the shops, so if you know anyone who keeps chickens, you can buy fresh eggs from them and know they will keep for longer.

yes, eggs will float when they are bad. They will turn on end sometimes but are still good, but will float to the top when bad

Check the sell by date on the package, if it's 1 week past the sell date, throw them away.

I have heard that too.. I have also heard that if you crack them open and the whites spread out like water them they are old too... but the dead give away is the odor.. very bad eggs stink..

and there flat they should be like a sphere. well half a sphere.
