cut the end, and put it in your microwave for 10 seconds, the oils release and you squeeze the garlic out of its skin,,
you can also take whole clove, cut the top and put some salt and olive oil on it and bake it until tender,, is great to eat

Using a chef's knife or a Chinese cleaver, seperate the cloves by whacking the whole head of garlic. If youdon't need many, just pull a few cloves off, instead. Place each clove on your cutting board, and give it a good rap with the side of the knife blade. The skin should come off easily. If the garlic is very fresh, it may still cling some. In this case, roll each clove between your palms after whacking it, and the skin will loosen.

I learned this trick fro Food Network but you have to be careful.
Take a large chopping knife with the blade facing AWAY from you.
Put a clove of garlic beneath the blade then bring the heel of your hand down hard on the top of the knife and it'll pop the clove and break it out of it's skin so you can just pull it right out. But watch your fingers and do it fast.

leave the skin on and place single clove on a cutting board. Place a chef knife on top of the garlic ( so it is parallel to the cutting board) and smash the garlic clove. The skin comes right off and it is easier to chop!!

Take the flat side of a knife and squash the garlic clove. The skin will split open and you can scoop the meat right out of the garlic.

What I do is I use a large, wide knife, I cut off the end that attaches to the bulb, place the clove on a cuttting board and use the flat edge of the knife to smack down on the clove...the skin will come right off no problem!! Dont slap the knife! Youll cut yourself! Place it on the clove, use the heel of your hand to apply pressure to the flat side of the knife to crush the clove - presto, skinned garlic!

Place a knife with a wide blade over the garlic and then hit it with the hell of your hand. It separates the skin from the clove.

You don't have to use a knife however most do because it is the utinsil you are using at the time, you can smash it with anything. There is a thing you can buy or make, it is like a little rubber hose a few inches long and all you do is rollit acouple of times on the counter top, that is it! I always smack it with a flat knife though.

use the flat part of a knife or a soup can and set the clove on the counter. press or hit the clove rather hard and the skin will separate making it much easier to peel and slice chop or press.
