Grilled Eggplant and Tomato Sandwiches with Roquefort Dressing:
When grilled to perfection, eggplant peel is slightly crusty--a nice contrast to its tender, moist flesh. Roasted eggplant makes a hearty sandwich when combined with a coarse-textured bread, such as an Italian ciabatta or sourdough.
1/4 cup plain fat-free yogurt
3 tablespoons (about 3/4 ounce) crumbled Roquefort or other blue cheese
2 tablespoons minced fresh parsley
1 tablespoon light mayonnaise
1 garlic clove, minced
2 Japanese eggplants (about 1 pound)
Cooking spray
8 (1-ounce) slices ciabatta or sourdough bread
8 (1/4-inch-thick) slices tomato (about 2 tomatoes)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups trimmed arugula
Prepare grill.
Combine first 5 ingredients in a small bowl, stirring well.
Trim ends from eggplants. Cut each eggplant lengthwise into 3 slices; lightly coat eggplant with cooking spray. Place eggplant on grill rack coated with cooking spray; grill 3 minutes on each side or until browned and tender. Remove from grill; cut slices crosswise in half. Place bread slices on grill rack; grill 3 minutes on each side or until lightly toasted.
Spread yogurt mixture evenly over 4 toast slices. Top each with 3 eggplant pieces and 2 tomato slices; sprinkle evenly with salt and pepper. Top each with 1/2 cup arugula. Cover with remaining toast slices.
Yield: 4 servings (serving size: 1 sandwich)

Here's a favorite of mine. It comes from kraftfoods.com
8 oz. rotini pasta, uncooked
1 lb. boneless skinless chicken breast, cut into chunks
1/2 cup Italian Dressing, divided
2 cups broccoli florets (1 inch)
1 small red onion, thinly sliced
1 red pepper, chopped
1 green pepper, chopped
1 Tbs parsley
1/4cup grated Parmesan cheese
Marinate chicken in 1/4 cup dressing for one hour
Cook pasta as directed on package; drain well and set aside.
Cook and stir chicken with dressing in a medium skillet over medium-high heat for 4 min. or until no longer pink. Add broccoli, onions, peppers and parsley; cook until tender, stirring occasionally.
Toss chicken mixture with pasta and remaining dressing. Add more dressing, salt/pepper to taste. Sprinkle with cheese.
Serve with garlic toast.

chicken breast cooked in a cream sauce or blackened or grilled with asparagus topped with either Parmesan cheese or hollandaise sauce. also, a bake potato with butter, sour cream, and chives as well as shredded mild cheddar cheese and bacon bits would be good to add to your dinner. sister shubert rolls and ice tea (lemon optional)! marie callendar's key lime pie for dessert!

kilroy's chicken steak!
-mashed garlic
-lemon rind
-lemon juice
-honey
-a dash of fish sauce (substitute with salt if you don't have)
-lemon pepper (that is, black, white and green pepper with lemon rind)
mix ingredients and marinade... overnight is ideal but fifteen minutes should do. cook on low heat over a bit of olive oil, marinade and all. serve with butter rice or rosemary potatoes and a nice tossed garden salad.
