Nothing, oil is pumped out of rock reserves in the earth's crust, so all that will be left is an empty hole. It might fill up wil more oil or water. It can cave in if the pressure is to great. It's not pumped off of the ocean floor, but miles and miles into the earths surface.

The oil is trapped under an in layers of earth and then pressured by salt water from seepage's from below. if u pump out the oil & gas the salt water will fill it up but this is a continueing as CO2 is recycled in to ox. the wood, leaves etc is corbinized and if given enough time will again turn to oil/
