A sweet potato pie recipe with pecans, spices, bourbon or orange juice, and other ingredients.
INGREDIENTS:
1 pastry-lined pie shell
2 cups cooked, peeled sweet potatoes
4 ounces (1/2 cup) unsalted butter
1/2 cup heavy cream
1/2 cup light brown sugar, packed
2 large eggs, slightly beaten
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
dash salt
2 tablespoons brandy, bourbon, or orange juice
1/2 cup dark corn syrup
1 cup pecan halves (optional)
PREPARATION:
Prick bottom of pie crust with a fork; bake in preheated 425° oven for 12 minutes. Set aside.
Mash sweet potatoes with half of the butter (1/4 cup). Let cool. Add heavy cream, brown sugar, eggs, vanilla, spices, and brandy, bourbon, or orange juice.
Beat until fluffy; turn into pie crust. Bake at 375° for 20 minutes.
Combine remaining 1/4 cup butter with corn syrup and pecans; sprinkle evenly over top of pie. Return pie to oven and bake 25 minutes longer, or until a toothpick inserted in center comes out clean.
Serve with whipped cream or whipped topping.

Place the pie on a rack and cool to room temperature before covering with meringue.
For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

1/3 cup butter
3/4 cup sugar

2 cups cooked sweet potatoes, mashed
1 teaspoon vanilla
1/4 teaspoon salt
1 pie crust, 9-inch, unbaked
Preheat oven to 375 degrees F. Cream butter and sugar together. Add eggs and stir. Add sweet potatoes and mix well. Stir in milk, vanilla and salt, making sure all ingredients are thoroughly mixed. Pour into pie shell and bake 40 minutes. When using a commercially frozen pie shell, use a 9-inch deep dish shell.
For extra flavor you may add of 1/2 teaspoon each of cinnamon and nutmeg, or a tablespoon of grated lemon rind and a tablespoons of lemon juice. This pie can also be made without using a crust. Pour ingredients into a buttered 9-inch pie plate and bake 40 minutes at 375 degrees F. or until knife inserted in the centre comes out clean.

Coconut-Rum Sweet Potato Pie:
1 (9-inch) unbaked Cream Cheese Piecrust
2 cups mashed cooked sweet potato (about 1 1/4 pounds)
1/2 cup packed dark brown sugar
1/4 cup 2% reduced-fat milk
2 tablespoons dark rum
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3 large eggs
1/2 cup flaked sweetened coconut
Prepare Cream Cheese Piecrust in a 9-inch pie plate; set aside.
Preheat oven to 350°.
Combine sweet potato and next 7 ingredients (sweet potato through eggs) in a food processor, and process until smooth. Spoon mixture into prepared crust; sprinkle with coconut.
Bake at 350° for 1 hour or until set; shield edges of piecrust with foil after 20 minutes. Cool on a wire rack.
Yield: 10 servings (serving size: 1 wedge)

This is sweet patato pie caribbean style.You will need three medium sweet patatoes,milk, butter,ground spice, can pineapplejuice,sugar (optional).
1. peel and dice sweetpatatoes,add to rapidly boiling water
2. when cooked strain and mash
3. add milk, butter,groundspice, juice from pineapple
4. place in a dish, top with pineapple and cherries sprinkle with cinnamon , bake at 350.

SWEET POTATO PIE
Similar to pumpkin pie, but not quite as sweet. Serve with whipped cream, if you like.
Crust
1 1/3 cups all purpose flour
1 tablespoon sugar
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into small pieces
2 tablespoons chilled solid vegetable shortening, cut into small pieces
3 tablespoons (or more) ice water
Filling
2 large red-skinned sweet potatoes (yams; 13/4 pounds)
1 cup (packed) golden brown sugar
1 cup whipping cream
3 large eggs
1 teaspoon vanilla extract
3/4 teaspoon ground cinnamon
1/4 teaspoon ground mace
1/4 teaspoon salt
1 large egg white, beaten to blend
For crust:
Mix flour, sugar, and salt in processor. Add butter and shortening; using on/off turns, cut in until mixture resembles coarse meal. Drizzle 3 tablespoons ice water over mixture. Process until moist clumps form, adding more ice water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap in plastic; chill until firm, about 30 minutes.
Roll out dough on floured surface to 14-inch round. Transfer to 9-inch-diameter glass pie dish. Fold overhang under. Crimp edges decoratively. (Crust can be made 2 days ahead. Cover; chill.)
For filling:
Pierce potatoes with fork. Cook in microwave on high until tender, about 6 minutes per side. Cut open; cool completely. Scrape potato flesh into bowl; mash until smooth. Measure enough potato puree to equal 1 1/2 cups.
Position rack in bottom third of oven; preheat to 400°F. Place puree in large bowl. Whisk in brown sugar and next 6 ingredients. Brush crust with beaten egg white. Transfer filling to crust.
Bake pie until filling is puffed around edges and set in center, about 45 minutes. Transfer to rack; cool. (Can be made 1 day ahead. Cover; refrigerate.)
Makes 8 servings.
