Cooking chocolate is made with hardened vegetable fat which does not require 'tempering' to avoid white streaks developing which would be the case with 'regular' chocolate which is cocoa butter based.
It is usually sold as a low cost item compared with regular chocolate and tends to be made with cheaper ingredients such as cocoa powder rather than cocoa mass - ground beans - and there is a tendency to add wheat flour and whey powder instead of milk powder to cheapen it further.
Trust me - I was a Technical Manager in a chocolate factory!

Its much lower grade usually with less cocao in it.
Good plain dark chocolate should contain at least 70% cocoa (solids + butter), whereas milk chocolate should contains up to 50%. If you look at cooking chocolate some only contain about 7%

Cooking chocolate usually doesn't have sugar added. Regular chocolate does. I wouldn't eat unsweetened cooking chocolate. :b

Cooking chocolate, or Baker's Choclate. is either unsweetened or bittersweet. It's not like eating a Hershey Bar. Sugar scorches so it's better to melt unsweetened choclate. It's ment to be sweetened later.

Baker's chocolate has little to no sugar added to it. Therefore, it's not fit to eat by itself. The higher the cocoa content the less sweet it is. Good Luck!
