The exact origins of cheesemaking are debated or unknown, and estimates range from around 8000 BCE (when sheep were domesticated) to around 3000 BCE. Credit for the discovery most likely goes to nomadic Turkic tribes in Central Asia, around the same time that they developed yogurt, or to people in the Middle East. A common tale about the discovery of cheese tells of an Arab nomad carrying milk across the desert in a container made from an animal's stomach, only to discover the milk had been separated into curd and whey by the rennet from the stomach.

Folktales aside, cheese likely began as a way of preserving soured and curdled milk through pressing and salting, with rennet introduced later— perhaps when someone noticed that cheese made in an animal stomach produced more solid and better-textured curds. The earliest archaeological evidence of cheesemaking has been found in Egyptian tomb murals, dating to about 2300 BCE. The earliest cheeses would likely have been quite sour and salty, similar in texture to rustic cottage cheese or feta.

From the Middle East, basic cheesemaking found its way into Europe, where cooler climates meant less aggressive salting was needed for preservation. With moderate salt and acidity, the cheese became a suitable environment for a variety of beneficial microbes and molds, which are what give aged cheeses their pronounced and interesting flavors. The word cheese is derived, through Middle English chese and Old English cīese or cēse, from the Latin caseus.

Apparently an Arab man crossed a desert with his camel or was it in a convoy, and the milk he had in a leather flask turned to cheese. So I suppose it wasn't exactly invented, but accidentally discovered.

most probably developed by nomadic tribes in central asia, probably around 3000BC (5000 years ago). they developed a method of storing soured and curdled milk through salting and pressing, which led to the discovery of cheese. before alternate methods of making cheese were discovered the cheese was probably very sour or salty, and similar in texture to feta and cottage cheese. in europe we established how to change the flavours and textures of cheese. europe's more moderate climate meant that we didn't need to salt the cheese as much, meaning we could salt it in a variety of different ways. by storing them longer, more microbes and molds attach themselves to the cheese, giving each cheese a more distinctive taste, hence why there are so many different kinds

i could eat some cheese right now

I would say it was discovered rather than invented, like yoghourt and many other foods. I doubt someone sat down and said, today I will invent cheese.

An unknown shepherd many years ago. He was carrying goats milk in a pouch made of animal skin and through carrying and shaking when he tried to take it out it was solid. Eureka cheese was born.
