Green is an all purpose mud, meaning you can use it for taping of the tape to the walls or ceilings and as a coating on top of the tape. It has more glue in it and is harder to sand when it dries. The blue is a topping mud used to top the tape. It has little or no glue and is easier to sand making easier to finish. The light is an extremely light topping mud which is easy to sand but I have found can have little air pockets which don't show until paint is applied.
I recommend green for taping and blue for any additional coats.
