Hi!
They're the easiest to germinate. They require no special lighting, no special conditions and you get quick results!
Take a big enough container, top it with some kind of screening material (a piece of screen or a muslin that you fix tightly will do)
Wash seeds, remove the broken ones, they won't germinate anyway. Spread seeds tightly together on screen (on top of container) Keep seeds wet by spraying them often with water and watch them grow!
It's a fun project for kids and adults alike! And delicious.
You can even use the water that collected in your container to water your plants, it's full of minerals and vitamins!

for cress just sprinkle the seeds on a piece of wet cotton wool and keep damp sorry not sure about mustard

Put a piece of damp kitchen towel on a plate sprinkle the seeds to cover it and keep moist in a few days they will start sprouting but don't forget to water them

GET A SMALL TRAY, LAYER IT IN THE BOTTOM WITH BLOTTING PAPER, GIVE IT A GOOD SOAKING WITH WATER, SOW THE SEEDS ALL OVER THE PAPER, STAND ON A WINDOW SILL REMEMBERING TO KEEP THE PAPER MOIST. AND THE SEEDS WILL GERMINATE IN NO TIME.

Plastic or porcelain dish cotton wool
soak cottonwool in dish place seeds on top of cotton wool .
leave for 14 days approx.

Same way you grow any seeds... keep them warm and moist for several days until they sprout, then plant them in potting soil keeping them in moderate light.
