It really depends on what you're trying to talk about.
Typographically, of course, a word is a string of letters with spaces around it. In terms of speech, words can often be identified by subtle sound effects at their edges--for instance, in English we tend to pronounce some consonants more forcefully at the beginning of a word than elsewhere, and we also tend to put the main stress on either the first syllable or second-to-last.
You can also talk about the word as a lexeme--a meaning unit that can't be broken down into parts without losing or changing its meaning. (Of course, that definition also applies to idioms like "rule of thumb" or "don't let the cat out of the bag".) You can talk about a morphological root, which is a sort of basic form from which related forms are formed--like "talked, talking" from "talk," or "dogs" from "dog." (This definition doesn't exactly cover some irregular verbs, though--"am, is, were" from "be?")
