What about a Baked fruit sponge, recipe as follows
6 oz butter
6 oz caster sugar
1 egg, beaten
3 oz self-rasing flour
1 tbls milk
oil for greasing
12 oz frozen mixed summer fruits (available from most supermarkets) or frozen fruits of your choice
4 0z plain flour
2 oz almond biscuits crushed
Heat the oven to 180c, gas 4
Put 3 oz of the butter and 3 oz of the caster sugar in a mixing bowl and cream together, whisk in the beaten egg and fold in the self-raising flour with the milk.
Spoon the mixture into the base of a greased 1.1L/ 2 pint ovenproof dish and level the surface. Spoon the frozen fruit over the top.
To make the topping, mix the plain flour and remaining caster sugar together in a bowl and rub in the remaining butter, stir in the crushed almond biscuits and mix well.
Spoon the topping over the fruit, then place the dish in the oven and bake for 45 - 60 mins or until the sponge is cooked and the topping is crunchy and golden brown. Hope you like this

Lemon Surprise Pudding
Oven gas mark 6, 200 Celsius
1 large Lemon, grated rind and juice
50g butter/marg
100g sugar
2 eggs, separated
50g self raising flour
300ml milk
Beat the lemon rind, sugar and butter together until pale.
Add the egg yolks and flour and beat again.
Stir in the milk and 3 tbsp of the lemon juice.
Whisk the egg whites until they are stiff and won't fall out of the bowl if you turn it upside down over your head.
Fold the egg whites into the butter mix about 1/3 at a time.
Butter an oven proof dish and then pour the sponge mix into it.
Put this dish in a roasting tin and pour boiling water into the roasting tin so it comes about 1/3 of the way up the oven proof dish. Put into the oven and cook for about 45 minutes.
The pudding is ready when the top is set and if you press lightly it springs back.
And why is it called a surprise? Well if I told you it wouldn't be.

Home-made rice pudding.
Use full fat sterilized milk (my Nan's recipe!).
First of all, liberally butter a casserole dish. Add a small amount of pudding rice. Then, add some brown sugar - double the amount when compared to the rice that you've added. Add some butter. Then, fill up the dish with full fat milk. Sprinkle with some nutmeg on the top.
Place in a pre-heated oven (about 130 degrees) for about an hour / hour and a half, until the skin is thick, and underneath the skin is your preferred consistency.
Let it settle before eating it - it'll be hot!
Enjoy, with a bit of cream on top.
Yes, it is a heart attack waiting to happen, but it's gorgeous!

Bread and butter pud with custard
Now that will fill you up and keep you warm
10 slices of stale bread
1 pint of milk
2 large eggs
Surgar
Marmalade (if you like it)
Rasins and sultanas small bag
Butter
Butter the bread on both sides and if you wish add marmalade on one side and cut into triangles (one cut per slice) and place segments around the dish and then angled across. remember a goo tip is to sprinkle sugar a currents on each layer you make. mix your milk and eggs together and pour all over the bread. leave to stand for 15 mins whilst it soakes it all up. Place in a hot over 190c for 25-35 mins until the top is a dark golden brown or pops up when you touch
Now the easy bit warm up a tin of custard and serve the dish pipping hot. If you have any spare let it cool down and place in the fridge covered and will keep for 3 days. Depending on the portion you have over these days cook in a microwave for 1.30 mins

HOT RICE PUDDING IS GOOD!
Risgrot (Hot Rice Pudding)
My family traditionally eats this as a first course on Christmas Eve.
4 servings 30 min 30 min prep
Change to: servings US Metric
1 cup white rice
7 cups whole milk
Combine milk and rice in a heavy bottomed pot and bring to a boil over medium high heat stirring frequently.
Reduce heat to mantain a heavy simmer and stir frequently until milk and rice until thickened.
Serve with a pad of butter and cinnamon and sugar to taste. Enjoy!

Cut the middle out of a nice big eating apple ,fill with raisins and nutmeg put in bowl ,cook in microwave for 2-3 mins serve with nice hot custard with a nip of brandy in ,tinned if you like !

good old rice pudding with currants & cream, treacle pudding with custard or yoghurt, spotted dick & hot bramble sauce, any fruity crumble, poached pears (hot) with honey drizzle, that should keep you warm & busy, guides in most traditional recipe or microwave books .. happy cooking!. Ikey
