I make several different types of cheesecakes... ( from scratch) they're my favorite dessert! I have recipes for cheesecakes that taste excellent, and they have no eggs. These are whipped together and then refridgerated for several hours before eating. My favorite is a Peanut Butter cheescake; it's great, and everyone loves it. It's easy and quick, no eggs, no baking. The consistency is creamy.
All the cheesecakes that I put eggs in, such as the Amarato and the Lemon, are baked. They are wonderful, too! They tend to be a little different in texture, more firm, because of the added eggs.
Both baked and no-bake....wonderful!

The flavour is greatly enhanced with eggs, and it's a better texture too!

You can just use the egg whites and still have the texture, or you can use an egg substitute.

I don't think it would hold together when you cook it without eggs, I have never had one without egg.
