The concept of a last name is pretty recent in Jewish history. Up until some few hundred years ago, Jews weren't really known by last names, since they didn't have them. The traditional name was the name, followed by "son of x", the father, in Hebrew (Ben X), and then his father as well. So, structured it was, for example, Moshe Ben David Ben Ari, or Moshe son of David son of Ari. Some names are actually from ancient Israel, such as Cohen and Levi. Some were quite negative, and were anti-Semitic and forced on them, and then some were just like their neighbors, the father's name or profession was used. Jews from Arab countries; however, have Arab names. It seems like you are making the mistake of assuming all Jews are white and/or European. True, some Jews might have "European" names, but that is because that is where their family is from. Most Jews, whose families date back as far or further than Arab, Persian, or Islamic rule, have names that reflect that area, and not European. This is negated, however, concerning Israel: There, Jews from both changed their names, to Hebracize them and to throw off the idea of exile.
