On Yahoo! Answers, I only hear Christian fundamentalists and atheists debating it, so I'm wondering what do Jews believe about the issue?

Some believe in creation and some believe in evolution.
Some believe in the universe was both created AND evolved into what we see today.

Albert Einstein put something called the Cosmological Constant into his General Theory of Relativity for the sole purpose of conforming to creationism. Strangely enough, it was a Vatican Priest named Georges LaMaitre who spotted this "fudge factor" and actually convinced Einstein to retract it.

It seems most serious scientists (from ANY religion) understand that the Bible is a spiritual manual rather than a science manual, and treat it accordingly. It reminds me of the words of a semi-famous Rabbi: "Just because it is written...doesn't make it so"

Jews and Christians both believe in the Old Testament ideas about Creation.

similar to what tony wrote, there are those who believe in evolution and those who don't. however, we have much more flexibility than christians because we don't take simple readings of verses. We have an oral law and oral tradition which makes the text much richer and complex.
for example, "eye for an eye" is not understood literally in judaism. we say it means "pay the value of the eye".
