Well first decide what style your meal is.
You can try different cuisines - Chinese, Thai, Indian, Mediterranean, Mexican, American etc.

Decide on the center of your meal - usually a "meaty" thing but can also be a pie or no center like stir-fry, etc.

after you decided what your meal is based around add extras that fit.

For example - if the center is a burger, add some chips or onion rings, peas or pickles etc. If your center is a pie or pasties try adding fresh salad to it. If you're having a theme dinner - say an Indian curry, add white rice and soft bread or poppadoms (Indian crispy bread) to make it more of a meal than a dish.

Try to always have at least one or two green or raw vegetables on your plate. If you're not really into vegetables try roasting them with just a bit of oil and some spices, or adding gravy to boiled veggies.

Try looking through the recipe websites listed for some ideas.

There's lots of website with vegan recipes like http://www.vegan-food.net/ I'd suggest browsing through recipes and picking the ones that you like. Then from your favorite recipes, plan out a few days worth of meals. Make a grocery list and go shopping.
