Playing is the way that human beings and other animals learn to do things. It is important for mental development. E.g Playfighting Cats learn to hunt by pouncing on their mothers tail and stalking their brothers and sisters. It allows them to catch prey when they are older. It allows them to develop the necessary skills to survive.

Your question is WHY do children want to play, not how good playing is for them, or what it does for them physically and emotionally.
Children never think "why" they want play and they don't care about how good it is for them. They care what it means TO them, though.
Therefore, children want to play because they see other children and they want to "connect" with them and participate with them, to be part of something more than themselves, to use their imaginations by imitating grown ups and groups, such as "cops and robbers" or "cowboys and indians", "mommy and baby", and "teaming up" in sports. They also want to play individually because they like time to think and to do things on their own and do things as they want without input from other children.
Without realizing it, children continue to play because, through playing, they develop a sense of satisfaction, acheivement, and self-worth, as well as friendships, which reinforce a desire to continue to play.
My "philosophy" is: playing is a child's "full time job".

Because that is what children do. They are children for such a short time that it would be a shame for them to have to do anything else.
