APPLE COBBLER
Peel and slice into a baking dish, 5 medium size apples. Combine and sprinkle over the apples: 1/4 tsp. cinnamon 2 tsp. lemon juice 1/8 tsp. salt
Bake 30 minutes in a 350 degree oven. While the apples are cooking, sift: 1/8 tsp. salt 1 tsp. baking powder
Cut into it: 1/4 c. skim milk
Turn onto a floured board and pat until the dough will cover baking dish. Place the dough on top of the apples and cut slits for the steam to escape. Bake 20 minutes in a 450 degree oven. Boil together: 1/4 c. water
Pour over the cobbler and bake 10 minutes more. Serve warm. Six servings.
Variation: Use 2 cups fresh or canned fruit instead of

Rhubarb and Apple Cobbler
Yield: 6 servings
Crust:
1 1/2 cups plus 2 tablespoons bleached all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/4-inch pieces and chilled
2 tablespoons vegetable shortening, chilled
3 tablespoons ice water, or as needed
Cobbler:
1/2 pound rhubarb (2 stalks), peeled and cut into 1-inch thick slices
2 apples, peeled and cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
5 tablespoons sugar
1/4 cup water
1 tablespoon all-purpose flour
1 teaspoon finely grated lemon zest
Pinch table salt
1 1/2 teaspoons unsalted butter, cut into slivers
Vanilla ice cream, for serving
Crust:
Sift the flour, sugar, and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to overmix.
Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes and up to 2 days.
Cobbler:
Preheat oven to 350 degrees F.
To prepare the cobbler, place the rhubarb and apples in a large, heavy saucepan. Add olive oil, 1 tablespoon sugar and water. Stir over high heat until the sugar has started to dissolve, 1 to 2 minutes. Reduce the heat to medium and cook, stirring often, until the fruit has exuded some of its liquid, about 5 minutes. Transfer mixture to a large bowl with the remaining 4 tablespoons sugar, flour, lemon zest, and salt. Cool slightly; pour into a lightly buttered 1-quart baking dish, and dot with the slivers of butter.
When ready to use crust, sprinkle a little flour on a smooth work surface, and using a rolling pin or dowel, roll the pie dough about 1/8-inch thick and large enough to cover the baking dish.
Cover cobbler with pie dough. Bake for 35 to 40 minutes, until top is golden. Let cobbler cool for 15 minutes before serving. Serve with vanilla ice cream.

Apple-Gingerbread Cobbler:
Prep: 15 min., Cook: 5 min., Bake: 35 min.
1 (14-ounce) package gingerbread mix, divided
3/4 cup water
1/4 cup firmly packed light brown sugar
1/2 cup butter, divided
1/2 cup chopped pecans
2 (21-ounce) cans apple pie filling
Vanilla ice cream
Stir together 2 cups gingerbread mix and 3/4 cup water until smooth; set mixture aside.
Stir together remaining gingerbread mix and brown sugar; cut in 1/4 cup butter until mixture is crumbly. Stir in chopped pecans; set pecan mixture aside.
Combine apple pie filling and remaining 1/4 cup butter in a large saucepan, and cook, stirring often, 5 minutes over medium heat or until thoroughly heated. Spoon hot apple pie filling mixture evenly into a lightly greased 11- x 7-inch baking dish. Spoon gingerbread mixture evenly over hot apple pie filling mixture; sprinkle evenly with pecan-and-brown sugar mixture.
Bake at 375° for 30 to 35 minutes or until set. Serve cobbler with vanilla ice cream.
Yield: Makes 8 servings

This one is my family's favorite! Get two boxes of Jiffy White cake mix.( It's super cheap!) Mix one up following the package directions and put in a lightly floured pan. Any pan works. Then add you apple filling homemade or from a can. Then spinkle the whole other package of cake mix dry on top. Cut up a stick of butter.(when i say butter, i mean butter stick margerine, tub margerine, whatever) and but the pieces on the top. Spread them out. Then bake according to the package directions. It may take a few more min then the package says. Its great and so simple!

slice some granny smith apples and spread in an oven proof bowl
rub butter, sugar and flour together
spread the flour mix over the apple and bake until golden
You can make the flour mix as buttery and sugary as you like.
