I would make a zoo book that contains 5 animals: tigers, lions, elephants, giraffes, and snakes. These are the more popular animals that children of preschool age like and can identify with.
Or! Make a book about the farm and have these 5 animals: pig, cow, sheep, chicken, and horse.

Little kids like bold colours and easily recognisable shapes so I would suggest
Elephant, Tiger, Panda, Giraffe, Parrot, Penguin, Snake, Mouse, Pig and Monkey.
I realise that Parrots and Penguins aren't animals but they are easily spotted and kiddies love them!

Wow what fun..I envy you.Really! you are gonna remember this experience with a smile..i promise..Think Crocodile Hunter..Steve Erwin Rocked!! May he rest in peace and love..Mention him to start.. then think of a way to get the kids involved..say a guessing game of ..which animals you may have in the book.. or to name some the Croc Hunter worked with and studied..You can't go wrong..If you are to give a presentation of the book you are making, remember that children that young have shorter attention spans as Everything is New to them and so keep your topics/reports per animal to no more than say 5 minutes per..it should keep them with you.. also props for each animal in your book would be a bonus..they could pass them around as you describe or if you want to maintain some semblance of calm you could point out differences on each animal described, as to animals to include..:: crocs, and the alligator..the diff between is the crocs jaw opens from the top and the alligators jaw hinges from the bottom, that's why they always are on top of crocs , they can't open mouth if weight too great to lift ..then there are dolphins vs porpoises..difference is shape of nose..as well as others but I'll let you gather that info if you choose to use them..LIONS,TIGERS,BEARS, oh my!PENGUINS,ELEPHANT,MONKEYS: rhesus, baboon, gorilla, SLOTH,RACOON,WHALES, PARROTS,WOLVES,MEERKATS,KOALA,KANGAROO,PIGS,BOARS,ZEBRAS,GAZELLES,ANTELOPES,WOLVERINE,BADGERLYNX,,CHEETAH,I could go on and on but as you didn't specify what animals if any specific to be used I just kind of let whatever came to mind come.. there are hyenas, hippos, chimps, polar bears, puffins(bird species) I just realized that i named a non animal in naming the snake..oops!! But there are also the rhino, the rabbit, cow horses, kinkaju,coyote,mountain lion..leopard, the black panther that is actually a leopard that's spots have melted together..a lil trivia..a tiger will still be striped if you shaved it..as will a zebra,and any other animal that is marked vividly by their fur..it goes below the skin..Cool huh? Anyway i have more animals for you but until I have a direction it seems spotty.. if i can help further let me know.. I live to get people hungry for knowledge about animals.. I have had a lifelong love affqair with them.. oh yes don't forget the anything but ordinary pet dog and house cat.. they play a vital role in our lives.. another tidbit of trivia that may surprose you.. Did you know that the lions and tigers and cheetahs and such large cats..come from the anything but common house cat? yep..sabertooth...housecat...lion/tigers..that came from Discovery Channel/ Animal Planet>>Wild huh? i thougt so..Check it out.. I wouldn't lie about my cats..I love my cats!!as i love all animals but i am fasinated by cats..Have a great time..You will do fine.. just take a moment to recall yourself at 3,4, and 5 yrs old.. really try to get there in your head.. talk to them..never at them.. remember how we hated that then? If I were you, I'd do a theme since animals is such a broad subject! Example: Farm animals, Circus Animals, animals on safari, pets, Underwater Friends...you get the idea!

Dont forget baby animals..Cows, calves,kittens, cats,puppies,dogs, fish , horses, pig, chickens,ducks,ducklings, mice,
rabbits, bunnies, bears, birds, snakes, raccons, squirrls,chipmunks, frogs, geese,
monkeys, whales, dolphins, giraffes, kangaroos, joeys, sharks, wolves, elephants,
tigers, lions, and zebras.
