1-1/2 cups mashed cooked sweet potatoes
1/2 cup firmly packed brown sugar
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
2 eggs, lightly beaten
1 cup evaporated milk
1 Tbsp. butter or margarine, melted
1 cup BAKER'S ANGEL FLAKE Coconut, divided
1 unbaked 9-inch pastry shell
1 cup thawed COOL WHIP Whipped Topping
PREHEAT oven to 400°F. Mix sweet potatoes, sugar, cinnamon, salt, ginger and nutmeg in large bowl until well blended.
ADD eggs, milk and butter; mix well. Stir in 1/2 cup of the coconut. Pour into pastry shell.
BAKE 35 minutes or until knife inserted in center comes out clean. Cool. Top with the whipped topping and remaining 1/2 cup coconut just before serving.

Sweet Potato and Pineapple Pudding
3 pounds sweet potatoes, peeled and shredded
2 8 ounce cans crushed pineapple in unsweetened juice, undrained
1 12 ounce can evaporated milk
1 1/4 cups brown sugar, firmly packed
6 tablespoons margarine or butter, cut in cubes
3 eggs, slightly beaten
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
Lightly grease crockpot. In crockpot, combine sweet potatoes, pineapple, evaporated milk, brown sugar, margarine, eggs, cinnamon and nutmeg. Cover and cook on low 7 to 8 hours or on high 4 hours, stirring every 2 hours until the potatoes are tender. Serve hot or at room temperature.
NOTE: This dish may appear to be curdling, however it will come together toward the end of the cooking. Serve 10 to 12.

Ingredients:
1 sweet potato, peeled
1 large mango, skin removed
For the dressing:
3 Tbsp olive oil
4 Tbsp fresh mint, chopped
Juice of 1 lime
1 tsp grated lime rind
1 Tbsp rice wine vinegar
1/2 tsp extra-fine sugar
Sea salt and pepper, to taste
1 head Bibb or Boston (round) lettuce
1/2 cup (10g) fresh mint
Directions:
Preheat the grill or grill pan to medium.
Chop both the sweet potato and mango flesh into long wedges, about 3/4-in (2cm) wide, 1/2-in (1 cm) thick. Place in separate dishes.
Combine the dressing ingredients in a small bowl and pour half over the mango and potato.
With tongs in hand, arrange sweet potato wedges directly over the grill and leave for 6-8 minutes, until grill marks appear and the bottom sides begin to soften. Turn and grill the other side for a further 6 minutes. While the other sides are cooking, arrange the mango wedges directly on the grill. Grill for about 2-3 minutes on each side. Transfer all the wedges to a cutting board and cut into cubes. Place them in a bowl and toss with the remaining dressing.
Arrange lettuce leaves on salad plates. Scatter the sweet potato and mango over the lettuce and add a sprinkling of sea salt and finely sliced mint.
Serves 4-6

Sweet-Potato Pone is an adaptation of an Indian dish made from grated sweet potatoes and honey. It can be fancy with eggs and a variety of spices, or plain with just sweet potatoes and sugar or syrup. This simple version is very similar to the pone made by the Indians. It makes a good side dish with ham or pork chops, and is even good for dessert with whipped cream. Makes 6 servings.
4 c. coarsely grated sweet potatoes
1/2 c. water
1/4 c. light brown sugar
1/2 tsp. salt
1/4 tsp. ground ginger
1 tbsp. melted butter
3/4 c. honey or dark corn syrup
1. Heat oven to 350 degrees. In a large bowl combine sweet potatoes, water, brown sugar, salt, ginger, and butter.
2. Generously grease a 1 1/2 quart shallow baking dish. Spoon sweet-potato mixture into dish. Bake until potatoes are tender - about one hour. Drizzle with honey and bake 15 minutes longer. Serve hot, or cool to room temperature. Serve with whipped cream for dessert.

1/2 lbs. sweet potatoes
3 apples; cored & sliced
3/4 cup orange juice
1/2 teaspoon cinnamon
1/8 teaspoon each allspice & nutmeg
2 tablespoons brown sugar
1/2 cup nuts; chopped
In a medium saucepan, cook unpeeled potatoes in boiling water for about 20 minutes or until tender. Drain.
Meanwhile, in a medium skillet, heat apples and orange juice with spices. Cover and cook until apples soften, about 3-5 minutes.
Peel sweet potatoes and slice. Place in casserole dish alternating apples and sliced potatoes. Sprinkle with brown sugar and nuts.
Microwave on High for 4-5 minutes.

My sister bakes the sweet potato then when they are done she slices them open, fluffs them and adds butter a little brown sugar and a few marshmallows inside them and returns them to the oven until the marshmallows have browned. I make mine the same way but omit the sugar.They are very good.

a sweet potato empanada. it's like a pie but the pie crust is cut in triangles and the empanada(mashed and seasoned with sugar, cinnamon and butter) is stuffed into and and then another triangle is placed ontop of the bottom one and sealed with egg batter. it's a bit more complicated, but it's great to serve with whip cream.below is a better recipe. hope you like!

1 c. sweet potato, cooked & mashed
3/4 c. brown sugar
1/2 c. sugar
1 egg
3/4 c. margarine
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. cinnamon

3/4 c. quick cooking oatmeal
1 c. pecans
1 c. raisins
Mix butter and sugar together. Add eggs and dry ingredients and then pecans and raisins. Drop by teaspoons. Bake at 350 degrees for 10 to 12 minutes.

4 eggs, separated
2 c. sugar
1 (13 oz.) can evaporated milk
1 (14 oz.) condensed milk
1 tbsp. vanilla
3 c. cooked, drained, creamed sweet potatoes
8 c. homogenized milk
Beat egg whites until stiff. Add yolks and remaining ingredients and beat after each. Freeze in hand or electric freezer. Yield: 6 quarts.

2 1/2 c. vanilla wafers, finely crushed
1/2 c. margarine or butter, melted
2 med. sweet potatoes, cooked, peeled, cooled
2 (8 oz.) pkgs. cream cheese, softened
2/3 c. sugar
2 eggs
1 (16 oz.) carton sour cream
1/4 c. orange liqueur or orange juice
1 tsp. ground cinnamon
Combine crushed wafers and margarine. Press mixture firmly on bottom and 2 inches up sides of an 8 inch springform pan. Chill 1 hour. In blender or food processor, process potatoes (should have about 1 cup). In a large mixer bowl, beat together cream cheese and sugar with electric mixer on medium speed until fluffy. Beat in eggs just until combined; do not over beat. Blend in sweet potatoes, sour cream, liqueur, and cinnamon. Pour into crust. Bake in 350 degree oven 55 to 60 minutes or until center appears nearly set. Cool on wire rack 5 to 10 minutes; loosen sides of cheesecake. Cool 30 minutes longer; remove sides of pan. Cover and chill 4 to 24 hours.
Sweet Potato Pound Cake:
1 c. shortening
1/2 c. melted oleo
3 1/2 c. all purpose flour
1 tsp. baking powder
1 tsp. cinnamon
2 1/2 c. chopped pecans
1 1/2 c. mashed sweet potatoes (No. 2 can)
1/2 tsp. almond extract
6 eggs
1 tsp. salt
1 tsp. soda
1 tsp. allspice
1 1/4 c. buttermilk
Cream shortening and oleo; add sugar; beat well. Add eggs, 1 at a time. Beat well each egg (1 minute each). Combine next 7 ingredients. Stir well to cream mixture, alternately with buttermilk beginning with flour and ending with flour, tablespoon at a time. Grease and flour 1 (10") bundt pan. Sprinkle nuts over bottom of pan and on top of cake. Bake at 350 degrees for 1 hour and 10 minutes. Cool 10 minutes in the pan
Yam Squares
1 c. flour
1 stick oleo
1/2 c. chopped pecans, chopped fine
Melt oleo and mix flour and pecans all together. Press in a long dish. Bake at 350 degrees for 10 to 12 minutes. Cool completely.
FILLING:
1 lg. instant Jell-O pudding, vanilla
1 c. milk
1 can mashed yams, or 1 can pumpkin
1 tsp. pumpkin pie spice for pumpkin pie
1 tsp. cinnamon for yam
1 tsp. vanilla
Cool Whip
Whip all together, except Cool Whip, and pour over cool crust. Top with Cool Whip. Sprinkle crushed pecans on top.

When I lived in Georgia I visited a black family on the other side of the railroad tracks(literally, no joke). The Gramma was cooking and they asked me to stay for dinner (a huge surprise since I come from a known racist family). She made french fries out of sweet potatoes that would make McDonald's weep in shame. They were the best french fries I ever had in my life. I have tried many times to duplicate the recipe with dismal failure every time.
