for example this sentence...
He speaks Spanish.
or is it:
He speaks spanish.
which is right?

Yes, in English you capitalize the names of languages because we treat them as proper nouns. He speaks Spanish.
However, this is not necessarily true in other languages for example, if you ask the same question in Spanish, it would look like this:
El habla español. Got it? Good luck
