The only difference between mild cheese and sharp cheese is about 90 days in an aging room. The rounds of cheese are wrapped in cheesecloth, then dipped in wax, so the air is excluded. Then the rounds are placed in a cool room and left for 30 days to produce mild cheese, 60 days for medium and 90 for sharp cheese.
Some types of cheese, such as blue cheese, have special bacteria introduced into the cheese which is then left to mature and the bacteria works on the cheese, producing the characteristic blue streaks through the cheese and giving it a good bite.
