They absorb water.

The plumping action only happens with natural casing dogs. The most common casing is sheep intestine, and when it cooks over high heat it shrinks in length while relaxing in circumference. This makes it appear to plump but it is actually a bit shorter than the uncooked(cold*) hot dog.

Skinless hot dogs do not plump at all.

*All "hot dogs" sold in the united states are completely cooked, Bratwourst may contain exactly the same ingredients but isn't required to be cooked prior to sale.

It's because there's a casing on the outside of the hot dog and when you cook it the meat inside expands from the heat causing the dogs to swell up. The normal way to deal with this is to use a fork and poke it in the dogs prior to cooking to allow the steam to escape. The not so normal way is to nuke them and watch them explode cuz it's fun to watch. ;-)

As near as I can tell, it's probably because there is a lot of water and fat inside of the hot dog, and as the wiener heats, this water/fat combination expands. The greater the expansion, the greater the swelling of the hot dog.

The simple absorbtion of water doesn't explain the swelling, because microwave and grilled hot dogs also "plump when you cook 'em."

Well,I'll be very careful with my answer,
When you boil the hot dogs ,you'll see the amount of the water is decreased because it's observed by the hot dogs the same way when
you cook rice.

Heat causes expansion. When you heat the hot dog it expands. It does the same thing no matter how you cook it.

I am sorry to say, the ones that plump are made with cow lungs. The lungs are porous like a sponge. When you cook 'em they absorb the water. I wouldnt eat one if you paid me.
