Oatmeal is a product made by processing oats. In North America, oatmeal means any crushed oats, rolled oats, or cut oats used in recipes such as oatmeal cookies. The porridge made from this is also called oatmeal or oatmeal cereal. However in other parts of the English-speaking world, oatmeal means coarsely ground oats.

Porridge is a simple dish made by boiling oats (normally crushed oats, occasionally oatmeal) or another meal in water, milk or both. Oat and semolina porridge are in many countries the most popular varieties. Some other meals used for porridge include rice, wheat, peasemeal, barley, and cornmeal.

In many cultures, it is eaten as a breakfast, often with the addition of sugar or cream. As the traditional breakfast of Scotland (where it is also spelled porage, after a popular brand name of oats) it is made with salt. Some manufacturers of breakfast cereal sell "ready-made" versions; aficionados question whether these can truly be called porridge. Gruel is a thin porridge made with water.

Porridge oats are grains of oats that have been rolled flat until they are about to lose their shape completely and turn into a coarse flour; in other words as fine as possible while still retaining their shape as a flake. This means that they are fairly powdery and will therefore absorb liquid quickly, which is why you only have to cook them for 2 or 3 minutes to get porridge. Jumbo oats are coarser. They are rolled flat but that is all and because they are not broken down so much, they retain their shape. Porridge oats go pastey when they get wet but jumbo oats stay firm. Jumbo oats will break down like porridge oats, but they need cooking for much longer. Jumbos are much better for things like biscuits and flapjack where a crisper or firmer texture is required. Rolled oats and oatflakes are just 2 other words for the same thing and both words can be used for either porridge or jumbos depending on which part of the country you are in. A classic example of a word meaning one thing in the north and the opposite in the south. Oatmeal is a meal (a coarse flour). It comes in varying degrees of coarseness ranging from the roughest, usually referred to as pinhead, which is an oat grain cut into about 8 pieces; to completely smooth which is just like a wholemeal milled from wheat.

Oatmeal is a TYPE of porridge. I'm guessing that Porridge is an umbrella definition, by in which oatmeal, cream of wheat, muesli, etc. all fit under. So oatmeal=porridge

Here in Scotland, porridge is spelled 'porridge'. I have never seen this meal called 'poridge'. Centuries ago it was part of the staple diet, often eaten as a main meal, with salt added. In England it has been seen as a breakfast, and traditionally has sugar added. Never, never insult a Scotsman by offering sugar with his porridge. :-)
