Garlic Cream Sauce
Yield: 1 Cup
Ingredients
3 oz cream cheese, cubed
2 cloves garlic, finely chopped
1 tbsp chopped fresh chives
1 tbsp butter
1/3 cup milk
Cooking Instructions
Melt butter in 10-inch skillet over medium heat. Cook garlic in butter about 2 minutes, stirring occasionally, until softened, reduce heat to low.
Stir cream cheese and milk into garlic mixture. Cook about 1 minute, stirring constantly, until smooth and hot. Stir in chives.

None! Try using blackening spices and blacken it when you cook it! Recipe below...
Blackening Rub
1 tablespoon salt
1 tablespoon plus 2 teaspoons white pepper
1 tablespoon plus 3/4 teaspoon black pepper
2 1/2 teaspoons dry mustard
2 1/2 teaspoons garlic powder
1/2 teaspoon dried thyme leaves
3 teaspoons cayenne pepper, or to taste
1/4 pound unsalted butter
Mix dry ingredients together.
To use
Melt butter over low heat.
Heat a cast iron pan over high heat, about 5 to 8 minutes.
Make sure the meat, poultry or fish is at room temperature and dry. Thin cuts do not work well. Dip the meat, poultry or fish into the melted butter and apply an even amount of rub to each side. Put into pan and leave alone for a minute or so, then check the underside of the meat for a nice dark crust. Adjust as needed. The kitchen may be quite smoky by this time. Turn the meat and repeat until the desired doneness is achieved.

all it needs is a quick butter sauce...reduce a half-cup of white wine by 3/4, add a bit of capers, a squeeze of lemon, and remove from heat.
stir in 1/2 stick of unsalted butter, cut into small chunks. sauce should be nice and creamy. season to taste and serve immediately.

i don't think that fruit would go very good with dolphin.........so i would say c.....just plain old lemon butter sauce with dill or even a good dill sauce....or i have made it cajun style blackened.....
