Depends on which "Clover Honey" you are talking about. I've listed 2 (below), & since you entered your question in the food section I'm assuming you mean the sweet stuff honey bees contribute to our pantry. BUT, just in case, I'll list them both, starting with the honey from bees! :) :)

About Clover Honey
Delicate blossoms make light, delicious clover honey.
Clover Honey Clover Honey may well be America's most popular honey. Both wild and cultivated clover blossoms give off the unique, warm scent of new-mown hay, particularly on sunny days. In California, meadows and roadsides brim over with clover blossoms of half a dozen varieties, and California honey bees know just where to go to find this flower that they love so much.

Clover honey is light in color with a rich smooth flavor, possessing a floral aroma delicate in nature with a pleasant medium sweetness, mild and delicious flavor. Clover honey is a great everyday table honey, and can also be used in cooking. The medicinal properties of natural honey continue to be explored by both traditional and alternative practitioners.

Honey Lab
Honey comes from floral nectar collected by honey bees. Since every species of flower has a unique nectar, honey from different flower sources can have very different qualities. Honey from different floral nectars can have different colors, flavors and textures.

How do honeybees make honey?
When a bee collects nectar from a flower, it does not swallow the nectar, but it stores the nectar in its crop (which is somewhat like its throat). When the bee returns to the hive, it evaporates the water from the nectar as it spits it out. While most floral nectar is between 70% and 80% water and 20% to 30% sugar, after a bee is finished the process it will be only 15% water and 85% sugar. At this point it becomes what we call honey.

Clover
Trifolium spp.
There are about 240 species of clover worldwide, and it is considered a common weed in many areas. It is found in temperate regions all over the world. Clover honey is light yellow in color and very sweet. It is the most common type of table honey in the United States.

Then there is the OTHER Clover Honey:

Clover Honey is the en femme persona of Mr. Clover Welsh and a well-known New York City socialite, activist and television personality. Mr. Welsh was born in Totowa, New Jersey and after reaching adulthood, moved across the Hudson River to New York City. He started dressing, expressing himself and performing as a “Lady” and became a prominent public figure, performer and national broadcast journalist.

It means the bees that made the "clover" honey were getting the pollen from clover plants. If you get "orange blossom" honey it means the bees have been buzzing around some orange blossoms.

It is a unique anime. Not like any other romance animes that is for sure. I rated it 9/10... because it is funny, and likable because of its characters and plot. It may not be the cup of tea for everyone, but if you like realistic romance, romcom development and some pretty wierd OP/ED's [reminds me of SZS] you should like it. Personally, I think every devoted anime watcher should see Honey and Clover, as it is something that isn't the typical shonen or mindless romance. And the twister scene is my favourite scene in all of anime, which is, actually, saying something.

it is called clover honey because it is harvested from bees that got the pollen from clover fields. and by that, you can deduce that orange blossom honey is from bees that visit the orange groves, etcetra. enjoy!

The bees that harvested pollen for making the honey primarilly harvested from clovers.

If you taste carefully, you can taste some of the other flowers they took pollen from - for instance raspberry blossoms, and others.
