I am not to fond of meatloaf and have never made it but my husband has asked me to make it before he leaves for Iraq; which is in two weeks. I want to make him the best meatloaf I possibly can and I was wondering if anyone would like to share their recipe?

2 pounds ground beef
1/3 cup chopped peeled onion
3 tablespoons chopped fresh parsley
1 1/4 teaspoons chili powder
3 cloves garlic, crushed
1 1/4 teaspoons ground sage
1 1/4 teaspoons salt
1 teaspoon ground black pepper
3/4 cup milk
2 large eggs
1/4 cup Worchestershire sauce
2/3 cup bread crumbs
4 slices bacon
1/4 cup tomato ketchup
2 tablespoons firmly packed brown sugar
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon ground black pepper

1. Combine the first 8 ingredients in a medium bowl.
2. In a large bowl, combine milk ,eggs and Worcestershire sauce. Mix in beef mixture. Add bread crumbs.
3. Grease a large sheet of aluminum foil, place bacon on foil. Mold mixture over bacon. Refrigerate 2 hours, or over night.
4. Preheat oven to 350°F (175°C).
5. Place meatloaf on a cookie sheet and bake for 1 hour.
6. Combine ketchup, brown sugar, salt, mustard and pepper. Open foil , drain any juice. Spoon ketchup mixture over meatloaf and bake, uncovered, an additional 30 minutes. Serve immediately.

Makes 6 servings.

BBQ Meat Loaf

Ingredients
• 1/2 pound each ground beef, pork, and turkey
• 1 cup milk
• 1/4 teaspoon dried basil
• 1 tablespoon Worcestershire sauce
• 1/4 cup chopped onion
• 1/4 cup chopped mushrooms
• 1/2 teaspoon salt
• 1/2 teaspoon fresh ground pepper
• 1 clove garlic, minced
• 3 slices white bread torn into very small pieces
• 1 large egg, beaten
• 1/2 cup barbecue sauce


Directions

Preheat oven to 350 degrees. Mix all ingredients except barbeque sauce in a large bowl. Transfer mixture to a 5 x 9 inch ungreased meatloaf pan. Pour barbecue sauce over the tope of the meatloaf.

Bake meatloaf for 1 1/4 hours or until center is no longer pink. If using a meat thermometer, the internal temperature of the meatloaf should be 180 degrees.

Let meatloaf sit for 5 minutes before removing from pan to serve. You can serve with additional barbecue sauce if desired.

Well, gosh, this is a pretty formidable task. Why don't you look on some of the recipe web sites. The traditional recipes call for 1 pound of ground beef, 1 pound of ground pork, 1 pound of ground veal. I usually use 2 pounds of ground chuck. You'll need to buy a 16 ounce can of Hunts tomato sauce. Chop 1 large onion. Take 3 slices of white bread and remove the crusts and break them into small pieces (use old bread). Put the ground chuck in a large bowl, add the bread pieces, add 1 or 2 eggs, 1/2 cup milk, 2 teaspoons salt, pepper to taste, add 1/2 of the tomato sauce. Mix the mixture thoroughly. Preheat the oven to 325. Form the meat mixture into two loaves. Place the loaves in a 9 x 13 Pyrex baking dish and make little grooves across the short side of the loaves. Pour the remaining tomato sauce over the loaves. Loosely lay a piece of aluminum foil over the top of the meat. Place in oven for about 1 hour. Remove the alumin foil after 1/2 hour. I hope you find a recipe that your husband likes. Can you get a recipe from his Mom or Grandmom.

This is, by far, the best meatloaf ever.
I don't like meatloaf, but I LOVE this stuff!!
You can also substitute ground turkey, but it isn't quite as good.

Barbeque Meatloaf

1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary

Preheat oven to 350 degrees F.

Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

Cook's Note: Try serving as a sandwich with mayonnaise.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.

Bake for 45 minutes; drain any residual fat if necessary.

Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Try this recipe - you can substitute rolled oats for the bread crumbs. (that is a classic) But if your husband is asking for meatloaf I bet the one he wants and remembers is the one his mother used to make. If you have a decent relationship with her I'd ask her for her recipe. (she will love you for life)


Treat your family to a classic dinner that is guaranteed to have second helpings.

Ingredients
2 lbs Ground chuck
1 Large onion, finely chopped
1 cup Breadcrumbs
2/3 cup Chili sauce or ketchup
2/3 cup Parsley, finely chopped
1 tb Worcestershire sauce
3 Eggs, lightly beaten
1 tsp Salt
1/2 tsp Black pepper

Preparation
Preheat oven to 350. Combine all ingredients in a large bowl and mix with your hands until well-blended but not overmixed.





Fill lightly greased 9 x 5 inch loaf pan with mix. Put pan on baking sheet and bake until meat is firm and has shrunk from the sides of the pan, about 1 1/4 hours. Pour off excess fat and let sit 15 minutes.

Cook's Notes
Serve this American classic with baked or mashed potatoes, a green vegetable such as broccoli or green beans, and sliced tomatoes. Meatloaf sandwiches the next day are almost better.

There are many official meat loaf recipes already here but I am going to give you mine which is in no way official but as a grandmother of 5 I am told it is the best.

Simple: The trick to a good meat loaf is it being moist. To that end-- use the more expensive ground chuck instead of ground beef. 2-3 lbs mix in a large bowl:

Season with salt, pepper, onion (chopped). Hunts spaggetti sauce (about one forth cup), 2 eggs(the eggs are the magic--add a third egg if making a larger loaf).

Bread crumbs/or crunched up saltine crackers. I use the crackers. About one half sleeve of the crackers.
Mix it all together and dont be afraid to get in there and use your hands. It should be of a consitancy to mold--if it appears dry--add a bit more sauce.

Mold it and sprinkle left over crumbs all over the top and cook in a pre-heated oven at 325 for an hour.

As an added bonus--make a homestyle gravy:
2 tablespoons butter (i use real butter) 2 tablespoons flour, one forth teaspoon salt, I cup milk.

Melt butter over low heat--add salt (pepper optional), flour and milk. Turn up heat to simmer but dont leave the sauce--stir until it thickens and bubbles and remove right away.

Your husband will love it!

There are so many recipes for meatloaf, everybody has there grandma's recipe handed down to them to find out it was from Betty Crocker.

Here are some suggestions for ingredients.

Ground beef
ground pork sausage
chopped onions
salt
pepper
eggs
cracker crumbs (you may use bread crumbs)

sauce can very from ketchup or tomato sauce with seasonings and steak sauce like Heinz 57.

Here is what I would do if I were you.

Go to www.recipesource.com search for meatloaf and review the recipes with ingredients close to the above list.

After you mix all of the ingredients, cook a small meatball size and taste it to see if you like the flavor. Adjust the taste with your favorite seasonings, and spices.

1 and a half lb ground beef
2 eggs
1 8oz can tomatoe sauce

1/8 teaspoon pepper

3 tablespoons apple cider vingar
beat eggs,tomatoe sauce add onion,crumbs,salt & pepper,add meat,mix well,press into a ungreased 9 by 5 by 3 inch loaf pan,now have a beer cause thats alot of work,after ya got a beer down,combine the brown sugar ,mustard and vinegar then pour over top of meatloaf,bake at 350 for 70 minutes,,,this is real good,best 1 i came across,,maybe a couple beer brakes in there huh.

Meatloaf
750 g beef mince (depending on the amount of people being fed)
1 cup breadcrumbs
1 teaspoon curry powder
1 egg
1 onion (finely chopped)
milk (enough to make the misture very moist)
Sauce
1 cup tomato sauce
1/4 cup Worcestershire sauce
1 teaspoon coffee
1 teaspoon butter
1 tablespoon vinegar
1/2 cup sugar
1/2 cup water
3 drops lemon juice

1.)MEATLOAF:.
2.)Combine all meatloaf ingredients except the milk in a large bowl (I find this is easiest to do with hands).
3.)Add the milk until the mixture is very moist
Form the mixture into a loaf shape and place in a baking/casserole dish big enough for the loaf to fit with additional room.
5.)Place into 180º pre-heated oven for 30 minutes. Then pour sauce over meatloaf ensuring the entire surface gets a coating of sauce and replace in oven for another 30 minutes.
6.)Remove from oven

1.)SAUCE:.
2.)Combine all ingredients in a saucepan on a medium heat until it just begins to come to the boil.
3.)Pour over meatloaf and serve.
