If you're making fajitas
Chop one onion in half and then in 1/2 round slices 1/4" thick.
Break the individual onion slices up and add sliced 1/4" green bell peppers sticks.
In a large fry pan add 1 Tbls olive oil and 1 Tbls butter and brown onions and peppers on med/hi heat until just limp. Squueze lime juice over the top.
Add salt and pepper to taste (I like cajun seasoning)
carmelized onions just don't do it with fajitas.

to caramelize an onion :
Do not use a non stick pan
pre-heat saute pan , when hot add enough oil to barely cover botttom
Cut off both ends of the onion and slice med/ thin top to bottom
over med/ high heat saute until onions become limp , and then brown
season if need be when done

Add a little olive oil to the pan. You do not need to season them - onions caramalize when they are sauteed - and are very tastee on their own.
Many Mexican dishes are served with caramalized onions!!!!!!
