If you're making fajitas
Chop one onion in half and then in 1/2 round slices 1/4" thick.
Break the individual onion slices up and add sliced 1/4" green bell peppers sticks.
In a large fry pan add 1 Tbls olive oil and 1 Tbls butter and brown onions and peppers on med/hi heat until just limp. Squueze lime juice over the top.
Add salt and pepper to taste (I like cajun seasoning)

carmelized onions just don't do it with fajitas.

Cut off both ends of the onion and slice med/ thin top to bottom

Add a little olive oil to the pan. You do not need to season them - onions caramalize when they are sauteed - and are very tastee on their own.

Many Mexican dishes are served with caramalized onions!!!!!!

Fajitas are traditionally served sizzling on a hot iron platter, topped with caramelized onions. You can achieve the same affect by placing the cut meat in a very hot iron skillet, topping it with the cooked onions, and sprinkling on some lime juice, which creates the steam and sizzle.
