Redneck Caviar
2 cans Black-eyed Peas, drained
2 cans Corn, drained
3 green Onions chopped
1 bottle of ITALIAN Dressing
2 small cans Rotel Tomatoes, drained (mild or hot)
1 lg. can diced Tomatoes, drained (optional)
Garlic to taste
Combine all ingredients and serve with Tortilla chips. Can be used as relish.
Mexican Rollups
8 oz. Cream Cheese
1/3 cup Mayonnaise
6 green Onions, finely chopped
4 1/2 oz. can Black Olives, finely chopped
1/2 sweet Red Pepper, finely chopped
1 8.5 oz. pkg. Flour Tortillas
1 jar Salsa (for dipping the Roll Ups)
Using an electric mixer, thoroughly combine cream cheese and mayonnaise in a small mixing bowl. Add chopped onions, black olives, and red pepper (if desired). Blend all ingredients with the electric mixer or a wooden spoon. Spread a thin layer of the creamy mixture on each tortilla, and roll up, like a jelly roll. Place tortillas in the refrigerator for at least an hour. Just before serving, slice the tortillas in 1" portions and place on serving tray with the salsa in a bowl for dipping.
Depending on your spicy desires, you may also elect to substitute the red pepper with a minced poblano or even jalapeno pepper combination until attaining the desired degree of "hotness." For a festive presentation during the holidays, double the batch and use both red and green bell peppers to prepare your roll-ups.
Meatballs
4 lb. Ground Beef
2 Eggs, slightly beaten
1 cup dry Bread Crumbs
1/2 cup finely chopped Onion
1 tbs. Salt
1 tsp. Pepper
2 cups Milk
Preheat oven to 375 degrees. Combine all ingredients. Blend well. Shape mixture into 1-1/2" balls. Place on ungreased cookie sheet and bake 25-30 minutes until brown. Remove immediately and drain on paper towels. When cooled put into containers. Freeze and use within 3 months. Makes about 80 meatballs.
Party Pecans
2 tbs. Butter
1 cup Pecan halves
2 tbs. Jack Daniels Whiskey
2 tsp. Soy Sauce
1/2 tsp. Salt
2 drops Tabasco
Melt butter in pan. Spread pecan halves in pan. Sauté very slowly, stirring often, until pecans are lightly browned. Add soy sauce and Tabasco. Stir. Cool pecans on paper towels. Store in airtight container Makes 1 cup.

Cocktail Sausages
Pillsbury Crescent Rolls
Cut each crescent roll square into 4 pieces, wrap around sausage, cook according to crescent roll package directions. Serve with dipping sauces such as mustard, ketchup, sweet & sour sauce or whatever you like.
Spicy Tortilla Strips
1/4 cup Vegetable Oil plus add. For brushing
2 tbs. Chili Powder
1/2 tsp. ground Cumin
1 tsp. Cayenne
1/2 tsp. Salt
12 6-in Corn Tortillas
Put oven racks in upper and lower thirds of oven and preheat oven to 375 degrees. Lightly brush 2 large baking pans with oil. Whisk 1/4 cup oil with spices and salt and brush 1 side of each tortilla with it. Make 3 (4-tortilla) stacks and cut stacks into 1/4-inch-wide strips. Arrange strips in 1 layer in baking pans. Bake, switching position of pans halfway through baking, until golden and crisp, 12 to 15 minutes. Season with salt and cool completely in pans
Spinach Dip
1 pkg. Knorr's Vegetable Soup Mix
1 can Water Chestnuts, chopped finely
1 bunch Green Onions
1 cup Sour Cream
1 pkg. frozen chopped Spinach (thawed and squeezed dry)
1/2 cup Mayonnaise
Mix all together. Let stand for a few hours to mix flavors. Great on vegetables or crackers.
Spinach Dip
2 pkgs. Chopped Spinach
1 16 oz carton Sour Cream
8-16 oz Mayonnaise
1/2 Garlic Clove, crushed
Pepper
1 1/2 cup Shredded Parmesan Cheese
2 cups Colby/Monterey Cheeses
1 can Artichoke Hearts
Preheat oven to 400 degrees. Combine sour cream, mayonnaise 1 1/2 cups parmesan cheese, 1 cup Colby/Monterey jack cheese, garlic, pepper, artichoke hearts and spinach in a bowl. Bake for 45 minutes. When there are 20 minutes left, sprinkle the leftover cheese on top finish baking.

Potato skins and crudites would be good ideas....Add a fruit tray......maybe a little chocolate fondue..... and you're good to go....
Potato Skins
Potato skins are an all time favorite for many of us. They are great as appetizers or can be used as a side dish. Whichever way they are used, they are delicious.
Ingredients:
3 large potatoes.
½ lb. bacon.
1 package of shredded cheddar cheese.
Sour cream and chives.
1. Wash and pierce the potatoes. Microwave on high for about 20 minutes.
2. Once the potatoes are tender, let them cool for 10 minutes.
3. Once they are cool enough to handle, slice them in half.
4. Scoop out a good majority of the potato leaving only a 1/4 inch from the shell and set aside.
5. In a frying pan, cook the bacon until brown. Drain and place the bacon on a paper towel.
6. Once the bacon has cooled, chop it up into little bits and pieces.
7. Place the potato skins on a baking sheet and top with bacon and then the cheese.
8. Bake at 375 degrees for approximately 20 minutes or until the cheese has melted.
9. Put the sour cream in a small bowl and sprinkle with chives. This is a great topping for the skins. These are great little appetizers that go especially well with spicy chicken wings. Enjoy!

When You party till your hair smells like smoke, you have no idea where the clothes You're wearing came from, and You don't know how on earth it got to be three days later, that's a party. I lived in an apt when I was younger with my best friend who was a drug dealer at that time. I remember dozens and dozens of wild roaring drunk and stoned parties where I didn't have a clue who 80% of the people at it were, needless to say the furniture didn't thrive in that environment. I don't know whether the last straw for me was the idiot that thought pouring a bottle of vodka into the aquarium was a really good idea cause the "fish need to get lit too", or the idiot I caught feeling my unconscious fiancee up, a scene quite reminiscent of Jesus clearing the Pharisees out of the temple ensued after that one, I know that. How about some stuffed mushroom caps or pickled mushrooms or a cheese fondue.
(1) Mushroom caps:
16 large mushrooms...
1/2 cup cheese ( your choice, grated)
1 cup to 11/2 cups Stove Top Stuffing( prepared)
6 stripes bacon, cooked & crumbled
Wash and take out the stems, cut up stems into tiny pieces( fry if you like ). Combine bacon, Stove Top, and stem pieces all together. Stuff mushrooms caps and Bake for 8 minutes at 350*.
Take out & add cheese, Bake for another few minutes until cheese melts.
(2) Mushroom Munchies:
1/4 cup vegetable oil
1 tbsp. sugar
1/4 cup vinegar with lemon
1/2 tsp. onion powder
1/2 tsp. garlic powder
pinch of oregano
1 10 oz can Whole mushrooms ( drained)
Mix all together in a nice size bowl. Add mushrooms and marinate for 1 hour.
Serve as is with toothpicks.
(3) Pickled Mushrooms:
2 tins (6oz ea.) Whole Mushrooms
1 tsp. salt
1/3 cup salad oli
2 tsp. dried parsley flakes
1 tsp. prepared mustard
1 tbsp. brown sugar
1 small onion, thinly sliced & separated into rings
Combine all ingredients Except mushrooms, in a saucepan. Bring to a boil, add mushrooms and simmer 5-6 minutes.
Chill overnight and serve in a pretty dish. This is extremely delicious and it will go well with ribs.
(4) Cheese Fondue:
4 cups grated cheese
1/4 cup plain flour
1/4 tsp. salt
1/4 tsp. nutmeg
Dash pepper
2 cups dry white wine
2 tbsp. Kirsch
1 loaf French Bread, cut into cubes
Ina a small bowl combine cheese, flour, salt, nutmeg, and pepper. Toss lightly to coat cheese with flour. Stir in white wine.
Cook, covered in micro-wave on power 10 for 7-10 minutes. Stirring last 10 minutes. Keep micro-waving until cheese is melted. Stir in Kirsch.
Serve immediately with cubes of bread. Spear each with fondue forks. ( If cheese cools during eating, simply reheat for a minute).
You might also serve pizza buns that you could pick up at the store already made and you need only to heat in micro-wave.

Try this dip with fritos or tortilla chips:
1 roll breakfast sausage
2 packages creamcheese
1or2 cans rotel donot drain
Fry sausage in pan well done then add both pack of creamcheese stir till melted then add rotel mix all together well and done.

BURGER BITES
1/2 cup KRAFT Honey Barbecue Sauce or BULL'S-EYE Original Barbecue Sauce
1/4 cup grape jelly
1 lb. pkg. (24) small prepared frozen meatballs
1 can (8 oz.) pineapple chunks, drained
1 large red pepper, cut into cubes
MIX barbecue sauce and jelly in large skillet. Cook and stir on medium heat 2 min. or until jelly melts.
ADD meatballs to skillet; cook 10 min. or until heated through.
SKEWER each meatball alternately on long wooden skewer or toothpick with pineapple chunk

taco dip....24oz of cream cheese spread on bottom of 13 x 9 pan cooked hamburger (with taco seasoning cook according to package) and sprinkle top with shredded Mexican cheese. bake @ 325-350 til cheese on top is melted
serve with Tortilla chips or Doritos
