Chop up tiny bits of red bell peppers and cilantro.
It's zesty!!!!

Or, bake some cornbread & add real corn to the mix.

SOUTHWESTERN CORN

1 tablespoon vegetable oil
2 medium red bell peppers, cored, seeded, deribbed and chopped
3 cups fresh corn kernels, blanched (cut from 6 medium ears corn), two 10-ounce packages frozen corn kernels, thawed, or 3 cups canned corn kernels, drained
2 jarred jalapeño peppers, seeded and minced
1/2 cup chopped cilantro or fresh parsley
2 teaspoons kosher salt
Freshly ground black pepper to taste

Heat the oil in a medium saucepan over medium heat. Add the red peppers and cook for 2 minutes, stirring occasionally. Stir in the corn and the remaining ingredients. Cook until heated through, about 1 1/2 minutes.

Makes 4 servings as a side dish.

1. Melt 1 TBS butter or margarine in skillet. Add 1/4 cup diced onion, 1 TBS diced green pepper, saute until onion is translucent and tender. Add 1 can drained corn, stir until heated through.

2. Drain off about half of the liquid, add a pat of butter/margarine and a dash of red pepper or hot sauce. Heat and serve.

Add the drained corn to a box of cornbread mix with some grated cheese and freshly chopped chives. You can add drained corn to waffles or cornmeal pancakes too.

Try getting a skillet screaming hot and toss in some drained corn to sort of "roast" it a little. Add salt and pepper.

There are various kinds of corn casseroles. You can also add it to regular casseroles. I remember a casserole called 7 layer casserole which was as follows:

Layer in order given
1 c. uncooked rice
1 can undrained corn
1 tsp. salt
1/2 tsp. pepper
1 can (15 oz.) tomato sauce
1/2 c. water
1/2 onion, chopped
1 pound ground beef
1/2 tsp. salt
1/4 c. water
4 bacon strips cut in half.

Layer ingredients as given in 2 qt. casserole. Bake for 1 hour at 350 degrees, covered and 20 minutes more uncovered. Enjoy!

Dress up a can of corn? How about a paper towel skirt? Or a tiny corn cob pipe?
