Low Fat Oil Pie Crust

"Very easy recipe from my Grandmother. Crust can be rolled out a second time if necessary and it won't get tough."
Original recipe yield: 2 pastry crusts.

INGREDIENTS:
2 3/4 cups sifted all-purpose flour
1 teaspoon salt
1/2 cup vegetable oil
1/2 cup milk

DIRECTIONS:
Mix flour and salt together. Pour milk and oil into one measuring cup, do not stir, and add all at once to flour. Stir until mixed, and shape into 2 flat balls. Wrap in plastic wrap. Refrigerate for 15 minutes or more.

1-2-3 pie crust

1 part water
2 parts fat
3 parts flour

a part can be anything from a teaspoon to a ton so this is an easy recipe to make changes to if you have 1 pie or 1000.

cut the fat into the flour with either a fork, a pastry cutter, or with your hands. the small the pieces the more mealy or tender the crust. the larger the more flaky. so the best choice it to divide the fat into 3 parts and leave the last part for large pieces.

refrigerate BEFORE rolling. roll to desired size. I usually form it into my pans, then dock (poke the bottom with holes) and refrigerate for at least 15 minutes before baking.

Recipe for a single pie crust.

1/2 cup shortening, crisco( i also use 1/4 cup margarine and 1/4 crisco)
3 Tablespoons of hot water
1 tsp of milk
pinch of salt (optional)
1 1/4 cups flour(miight need a bit more)

Mix shortening with the hot water(I use my Kitchen Aid Mixer)
After that is mixed into a creamy substance then add the milk.
Slowly, little at a time, add the flour. Mix till it can be handled.

This makes one pie crust.. Double the recipe if you need to make two crusts.

Pillsbury has a great pie crust. You have to make sure they get to room temperature before you mess with them. I also like to roll them out a little thinner than what they come as. You can not tell the difference. Really.
