depending on the size of the chicken - Roasting a chicken will take approximately 20 minutes for every 500g (or 1 lb) of weight. That would be approx be 20mins X 5 = 1hr 40 mins @ 350 degrees Fahrenheit. To test if it is cooked , insert a fork or skewer in the chicken. I generally test it under the drumstick or wing. It should go in with ease and the juices should run clear. When you carve it, you may notice, the meat and juices nearest the bones might still be a little pink even though the chicken is cooked thoroughly. Enjoy!

I usually roast my chickens 25-30 minutes per pound at 325 degrees. A stuffed chicken can take a little longer. I always test the internal temperature on the chicken before I declare it cooked. I usually remove my chicken at about 168 - 170 degrees internal temperature (taken near the leg, which cooks more slowly than the breast) and let it sit for 10 - 15 minutes before carving. The temperature will continue to rise for several minutes after it comes out of the oven. Another way to test is to take a skewer and poke into the chicken to see if the juices run clear, but it's better to go by internal temperature.

Ingredients:
1 large onion, halved and sliced
1 bunch tarragon
½ a lemon
1 small free range chicken (about 1.5kg)
butter, softened
½ bottle of dry white wine

Method:
Heat the oven to 200°C. Put the onion and half the tarragon in a roasting dish. Put the lemon half and the rest of the tarragon (keeping back a few leaves) inside the cavity of the bird. Smear some softened butter over the breast of the chicken and season well all over.

Sit the chicken on the onion and cook for 1 hour, then add the wine and cook for 30 minutes or until the chicken is golden brown and cooked right through. Remove chicken and rest under foil for 15 minutes. Discard tarragon stalks and spoon off the excess fat. Put the dish on the hob and let the gravy bubble up. Season, add reserved tarragon leaves, cook for a couple of minutes then serve with the chicken.

Under an hour
I have a rule if the bird is around four lbs[ your typical fryer] i cook it at 400
rinse bird
stick a sprig of fresh rosemary in cavity along with 2 lemon halves
salt and pepper inside cavity and then liberally salt the skin
roast breast side up
when juices run clear and leg wiggles easily you're done

A medium size chicken would take about 1 hour at 350 degree temp of oven.

yea, it usually takes about an hour. i highly recommend buying a meat thermometer though. it takes the guess work out of the roasting and prevents you from having to slice into the chicken to check if it's thoroughly cooked. remember to constantly baste it as you go to ensure that the meat is moist. if your chicken starts to get too burned on the top towards the end, just loosely cover with foil.

Keep a note: poultry should be cooked for 15 mins per pound plus an extra 25 mins. put the prepared bird in it's tin, into a hot oven (400-45o degrees F, reducing to moderately hot (300-350 degrees) after 10 mins.
