The "printer" for this work just like many ink injection printers that actually don't touch the paper (in this case the egg), instead it get very close to the egg and then shot some very small drops of ink to it.

Piezo injets. It's a non-contact method - eggsactly (sorry) the same as your paper inkjet printer. This is how most best before / expiry dated are applied to many products. If you look at them on packages you can often see the uneven 'print' and ink bleed / overspray.

I watched a show that shows you how they get collected, washed, tested, sorted and packaged into containers and the STAMP is the least of the questions!!! I'm sure it's a soft stamp.
I watched it and I'm still amazed.
Try to catch it and see for yourself.

It might not be a stamp.
They could do it like an ink-jet printer does and spray drops of ink onto the egg.

with a very soft touch mechanical device that probably don't apply pressure to a focused area.. the eggs probably roll across it and they get stamped from below...

Eggs are very strong.
When you press down on both top and bottom, the pressure is equally dissipated in all directions.

I don't know for sure but I bet it's with a roller and not a stamp. Could be wrong though. Maybe they're stencilled!
