God does interact with man in Christianity. Christ said that after he was resurrected from the dead that he, the Father, and the Holy Spirit would all dwell with the Christian. God still speaks to us today as well. C.S. Lewis speculated that the reason for a lack of supernatural activity occuring in Western society today is because it is of no use. It will just be explained away by science. There will come a time, however, when the things that will come upon the earth will not be explainable by science. But yeah, God does still interect with people today.

Islam and Christianity stem from Judaism, so they got their transcendental view of God from Judaism, most likely.
Early Judaism also depicts God as very immanent, walking in the Garden with Adam, coming to Mt. Sinai and speaking with Moses, and so on.
I'm going to take a guess that post-exile Judaism developed a more transcendant view of God. At the time of the Babylonian exile, the Temple was destroyed. The temple was seen as God's dwelling place on earth. So in a very real sense, God's home was moved from the earth back up to heaven, in the eyes of the Jews. God retreated because of the disobedience of his people.
Another element that automatically makes Judaism have a more transcendent view of God, is the fact that they refuse to make images of God, or to try to conceive of his form in any way. They will not even say his proper name, for it was seen as too holy.
Israel has a long history of exile and being conquered. It was a very weak nation, constantly threatened by big Empires from all sides. When they were conquered by another nation, and exiled, this came to be seen as God's punishment. A God who gets so angry like that and punishes, is naturally seen as frightening and distant (at least when He's angered).

Without Education like we have at present, human minds were able to connect themselves to their higher consicousness to get wisdom. That ability to get wisdom is available to everyone but of course, there were people who are more adept to get it fast and the ones who does not realize they too have those abilities have contented themselves from listening and learning from those they call " the enlightnened". So, those who have the experience have taught it to be that there learnings were from someone higher they have interacted with.
Now that in these age where almost everything is printed and can be learned through several visual presentations, human ability to connects to his higher consciousness (Called God) becomes even harder to achieve.

In older religions in old times, like the Roman and Greek religions that you refer to, the people looked for - and found - God and Goddess in everything. From a stone to a bird to the sea to a womb, God and Goddess were in and of everything. And they showed their love and appreciation of all that God and Goddess had given them regularly with ritual and offerings and teachings.
Most people of religions with a single deity refer to these Roman and Greek religious ideas as 'mythology', meaning they never happened and are just interesting stories. This is untrue. During ancient times before the written word and the time of Christ, the Romans and Greeks, as well as many other enlightened communities, had an intricate pantheon of Gods and Goddesses with whom they interacted with and prayed to on a daily basis.
More interesting still (to me, at least) are the ancient Celts, of Ireland and Wales, who not only believed that God and Goddess were in and of everything, but that they actually walked the earth as humans at one time. Take, for instance, the Goddess Brighid, who was most revered as the Triple Goddess of the Celtic pantheon; one part symbolizes poetry and inspiration; one midwifery and healing, and the last crafts and smiths. An eternal flame was lit in her honor in Ireland, and was tended to by a group of virgins who had never laid eyes on a man. The flame was extinguished when Catholocism swept across Ireland; the flame was considered pagan. Yet, the Catholics went on to adopt Goddess Brighid as a saint: St. Brigid is the patroness of cattle, poetry, midwifery, and new borns. The Feast of St. Brigid is celebrated by the Catholic church on February 1st. Imbolc, Goddess Brighid's holiday of light, is celebrated by Pagans on February 2nd. Hmm.
Anyway, my point is that humans have to choose to interact freely with God. In most Christian sects, this is not a common practice; most parishoners are encouraged to speak to God through their pastor. Most prayer is not expected to be answered in a way that humans could easily hear or understand. God - no matter what you call him/it/her - interacts with us all everyday, through the birth of a blue jay, the sound of the wind, the warmth of the sun, the touch of a lover. These are all blessings and interactions with your god - if you will allow it to be.
All acts of love and pleasure are Her ritual.

Are you speaking of Greek mythology or what, I do not know of God interacting with humans in any of the books I have read old or new, where did you get your info from.
