2 eggs, poached
1 English muffin, split, toasted and buttered
2 slices bacon, cooked crisp
1 teaspoon orange marmalade
Spread orange marmalade atop English muffin halves. Top each half muffin with two half slices of bacon and one poached egg.
Tips for perfectly poached eggs: Use a pan that will hold about two inches of water gently simmering. Add two Tablespoons of vinegar or lemon juice to the water to prevent the eggs from spreading. Crack the egg into a teacup, then gently slip into the water. Poach for about four minutes, longer for a firm center. Lift the eggs from the water with a slotted spoon, trim off ragged edges, and touch the egg to a paper towel to absorb excess water.

EGGS BENEDICT
8 slices Canadian bacon - saute until heated through
8 poached eggs
4 English muffins (halved, toasted)
HOLLANDAISE SAUCE:
3 egg yolks
1 tbsp. lemon juice
1 tbsp. cold water
3/4 c. butter (1 1/2 sticks)
Salt and pepper (white pepper)
Combine egg yolks, lemon juice, salt, pepper and water in blender. Blend 10 seconds at high. Melt butter. As blender is running, add hot butter in a steady stream until mixture thickens (20 seconds). Serve immediately.
Layer English muffin with bacon, poached egg. Top with Hollandaise Sauce.
VEGETARIAN EGGS BENEDICT: Substitute Canadian Bacon for 1 (10 ounce) package frozen, creamed spinach - cooked according to directions.
Add 1 artichoke heart (unmarinated) for each muffin half.
Layer English muffin with spinach, eggs, artichoke heart. Top with sauce.

Some people just don't get subtlety.
In my opinion its actually spelled Beenadick nevertheless, the recipe would be quite simple.
Place one hypocritical religious figure well seasoned with biased double-standards in a room full of non-christian chicken farmers stir gently allowing the pope to run at the mouth and the inevitable results will be "EGG BEENADICK"!

INGREDIENTS:
1/2 cup butter
2 egg yolks
1 teaspoon fresh lemon juice
1/4 cup boiling water
dash salt
dash ground cayenne pepper
3 tomatoes, ends removed and halved
12 thin slices cooked ham
6 eggs
6 English muffins, split, toasted, and buttered
PREPARATION:
Eggs Benedict. In the top of a double boiler, whisk egg yolks and lemon juice together. Add 1/3 of the butter, about 3 tablespoons. Place double boiler over simmering water. Cook, beating constantly, until butter melts and sauce begins to thicken.
Add 3 more tablespoons of butter, stir until butter melts, then add remaining 2 tablespoons of butter. Slowly whisk in boiling water. Continue cooking over simmering water, stirring, until mixture thickens, about 2 to 3 minutes. Remove from heat; stir in salt and cayenne pepper.
Place ham slices and tomato halves on rack of broiler pan. Broil 4 inches from heat for about 4 minutes, or until ham begins to get browned and tomatoes are cooked through.
While ham is broiling, pour about 2 inches of water into a large skillet. Lightly salt water; bring to the boiling point. Carefully put eggs in water, breaking into a cup first, then gently slipping them into the water one at a time.
Simmer eggs, while basting with the water, for 3 to 5 minutes or until set. Remove with slotted spoon; drain.
On warm serving plates, place English muffins, 2 halves to each plate. Top halves with 2 slices of ham and a poached egg. Spoon a little sauce over the egg and place a thick slice of boiled tomato next to the egg.
Recipe for eggs benedict serves 6.

there are a few different versions I've had. The most common is two poached eggs over either a grilled english muffin or biscuit or croissant with grilled ham and then covered in hollandaise sauce. I've also had it with smoked salmon which is really good. I've also had it over steamed or grilled vegetables which was good as well. My favorite though is over a croissant and ham. mmmmmmmm
