My hubby is a truck driver and is gone for the next 5 weeks... this is the first time with him gone and I need some ideas for me and my daughter... i am used to cooking big meals and now that its just us i am lost... HELP PLEASE :-)

Stir fry is the quickest easiest and very healthy...

You can cook the way you always have, pop the leftovers in the freezer and you will only have to reheat the meal in two or three weeks when you're ready to have it again.

Consider getting a small crockpot. You can put anything in there in the a.m. and it's ready at dinnertime. Then you don't have to take time away from your daughter (who will already be missing Daddy) to fix dinner.

Or... bring her into the kitchen with you and let her help you cook. Let her come up with some ideas for the two of you and it will give you a shared activity... and conversation.... "This turned out really good! Let's make this for Daddy when he gets home!"

Have a few nights out for you guys... and if she's under 12, lots of chain restaurants have nights where kids eat free from the children's menu (usually Tuesday for some reason - lol)

Make homemade pizzas... get those Boboli crusts and veggies and lowfat cheeses and you each make your own.

Enjoy the time with her and enjoy the time you'll have for YOU while he's gone. I used to be a military wife, so I know what it's like to be a "single parent" for weeks and months at a time... and you can learn to use it to your advantage :)

I was just introduced to this receipe a few days ago and it is soo gooood! Unfortunately, I don't have the measurements, but the ingredients are simple so you shouldn't have any problems dooling out the proper amount.

Get enough wild rice for you and your daughter.

Have your daughter help you cut up the following veggies:
Snow Peas into little squares
Bell Peppers-little squares
Onions

Make a vinagrette:
deli-style mustard
rice wine vinegar
minced garlic
salt
pepper

The only thing that is cooked is the wild rice, all the veggies are raw. If your daughter isn't too keen on the raw veg, you can steam the veggies. If you are not going for something completely vegan, this receipe has enough room in it to add baked chicken breast/turkey. Whatever you want.

This Meal is quick and Good
Microwave Tuna Rice Dish
1 can cream of mushroom soup
3 eggs
1 pkg. frozen broccoli, thawed and chopped
1 cup minute rice
1 can water packed tuna
1/2 cup grated cheddar cheese
3 Tbsp. grated Parmesan Cheese
1/2 tsp. dill weed
1/4 tsp. pepper
1 Tbsp.Parmesan cheese , for garnish
Combine soup and eggs, blend until smooth. Add broccoli,rice tuna cheddar cheese, parmesan cheese and seasoning. Mix well.Pour into 10 inch pie plate or quiche dish. cover. Microwave on medium high for 5 minutes. Stir well. Sprinkle with remaining Parmesan cheese. Microwave for 6 minutes longer. Let stand covered 5 minutes longer.

You can also sign-up for their magazines that have some great recipes in it. They send it out seasonally.

You can do one of two things:
1. Freeze leftovers from the "big meals" you prepare. Freeze them in individual portion sizes.

2. Buy things like salmon steaks, chicken breasts, or wings. Serve up with risotto and salad. Very quick and very easy.

try poached eggs on baked beans on toast quick healthy and filling jacket potato with low fat cheese on top and a salad on the side
