Butterfly your chops and put them under the broiler for a few min..not to fully cook them but maybe 3/4 of the way.
next take some provolone cheese and either some proscuitto or cappacola ham and stuff the chops and bake them in the oven.
put a little stock at the bottom of the pan..if you dont have pork...beef stock will do just fine.
when they are done serve with linguine tossed in a little garlic butter.
pour the stock on the chops...garnish with a little fresh parsley..and you have a beautiful dish.

My granny's recipe is the best! My boys still call home and say, "If I pick up some porkchops will you fix them tonight?"

Take the boneless thin cut ones, or have the butcher slice the thick cut chops once more for you.

Make a dry mix of Bisquik (it gives the best flavor), salt, pepper, garlic powder, some Tony Chachere's, and whatever other spices you like.

Soak the chops for 20 min or so in milk or buttermilk.

Dredge the chops in the Bisquik mixture and fry in hot vegetable oil for about 3 minutes on each side. Don't turn them more than once or the breading falls off. Place the chops on a small cookie rack in a baking dish to drain so they don't get soggy.

That's it!

(Buy extra, especially if you have kids... I catch mine in the fridge long after dinner snacking on these chops!) Also, the best side dishes are homemade mac-n-cheese and a fresh pan of biscuits. The whole neighborhood shows up.

Pork Chops and Stuffing

Pork chops 1/2" thick 3-4 lbs.
1/2 cup Italian seasoned bread crumbs (plain bread crumbs w/italian seasoning)

Marinade
1/4 cup Italian Dressing
1 lemon (zest and 1 Tbls juice)
2 cloves garlic (squeezed thru press or finely minced)

Stuffing
2 cups stuffing or dried sourdough bread cut in small cubes
1 apple peeled, cored and chopped into cubes
1/2 tsp cinnamon
1 stalk celery diced
1 onion grated
1 cup chicken stalk
1 tsp Italian seasoning

2 Tbls olive oil
2 Tbls four
1/4 cup white wine (or marsala)
1 Tbls butter
3/4 cup chicken stock
salt and pepper to taste

In a large Ziploc bag combine the pork chops, Italian seasoning, lemon zest and juice from 1/2 the lemon, and garlic. Marinate in refrigerator while preparing the stuffing.

Stuffing
Combine the bread crumbs, apple w/cinnamon sprinkled on it, celery, onion and Italian seasoning and chicken stock together in a large bowl.
Pour stuffing in a large baking dish that has been oiled with Pam or olive oil spread with a paper towel.

In a large frying pan bring to med/hi heat.
Add 2 Tbls olive oil.
Pull the pork chops from the marinade and let the excess drip off over the stuffing.
Dust both sides of the pork chops with the bread crumbs.

Put the stuffing in a 350 degree F oven and bake for 10 minutes while you're frying the pork chops.
Sear the pork chops in the frying pan for 3 minutes on each side.

Place cooked chops over the stuffing and cover the baking dish with aluminum foil lid and continue baking for 30 more minutes.

Meanwhile add 1 Tbls butter and 1 Tbls olive oil to the fry pan that the pork chops were cooked in on medium heat.
Add 2 Tbls flour and brown slightly until it is bubbly.
Add 1/4 cup white wine to the pan and allow to reduce and scrape up the bottom bits from the pan.
Stir in 1/2 cup chicken stock slowly while stirring until you get the consistency you desire. Add more stock to thin out. Season with salt and pepper.
Serve this with apple sauce, a green salad and balsamic vinegar reduced over green beans and topped with sliced almonds.
Also great with sliced onions and green bell peppers sauteed in olive oil, salt and pepper.

the best pork chop recipe for my house is...
take a can a cream of mushroom soup with a can of green beans and put them in a dish and add some pork chops on top and sprinkle them with some Cajun seasoning.. cook for about 45 minutes and make some mashed potatoes and use the sauce in the pan as a gravy...
my daughter is very picky but she will eat that EVERY time
good luck :-)

Smothered Pork Chops

These pork chops are coated with bread crumbs and cooked in the slow cooker with cola, mustard, and garlic. Serve with mashed potatoes.Ingredients:

• 3/4 teaspoon black and red pepper blend
• 2 tablespoons cornstarch

Method:
In large skillet over medium-high heat, heat olive oil. Moisten pork chops with water. Combine Parmesan cheese and Italian bread crumbs. Dip wet pork chops in mixture and place in hot skillet. I usually dip it in flour, then in an egg mixture (beaten eggs, salt , pepper, italian seasoning, and adobo) then dip them into some italian bread crumbs and put them in some oil...enough to cover the chops and cook them until they are done...it would help if they were boneless....its really good. I dont have a concrete recipe on it because I made it up one day when there was no food in the house....

If frying the chops: Make a milk & egg mixture to dip the chops in before flouring! Take 2 eggs and 1/2 cup milk and beat throughly, add a little salt & pepper to taste! dip chops in egg mixture, then dip in flour and fry till meat is good and done!
