Unbleached all-purpose flour. Authentic shortbread contains butter, flour and sugar--that's IT. If your recipe calls for constarch, vanilla extract, or anything other than those three previous ingredients I mentioned, don't make it.

I use bread flour for most things that call for flour it seems to add body to the finished product

Bread Flour is best to bake bread. They sell it in any grocierie store.
