Chocolate Lava Cakes
Prep: 35 minutes — Cooking Time: 30 minutes
Chocolate Lava Filling:
3 ounces bittersweet or semisweet chocolate, chopped
6 tablespoons whipping cream
1 tablespoon light corn syrup
1 teaspoon vanilla
Cakes:
8 ounces bittersweet or semisweet chocolate, chopped
1 /4 cup coffee or water
1 1 /2 teaspoons vanilla extract
1 stick ( 1 /2 cup) unsalted butter, softened
3 large eggs, separated
3 /4 cup flour
1 /8 teaspoon salt
Cocoa powder or confectioners' sugar, optional
Vanilla ice cream or custard sauces for serving
1. For filling, lay plastic wrap over plastic ice cube tray. With fingers, poke plastic down into eight of the cubes so they are fully lined with plastic; set aside. Melt chocolate with cream and corn syrup in bowl over simmering water. Whisk until smooth. Stir in vanilla; let cool slightly. Fill ice cubes tray with chocolate mixture. Freeze at least 4 hours.
2. For cakes, heat oven to 425 degrees. Butter eight 4 ounce souffle dishes or ramekins. Place on jellyroll pan; set aside. Melt chocolate with coffee in bowl over simmering water. Cool slightly. Stir in vanilla. Set aside.
3. Cream butter with 1 /3 cup of the sugar with an electric mixer until light and fluffy, 3 minutes. Add egg yolks, one at a time, mixing will after each addition. Stir in chocolate mixture. Fold in flour and salt. Beat egg whites with clean mixer beaters until soft peaks form. Add remaining 3 tablespoons of the sugar, 1 tablespoon at a time, mixing well after each addition. Continue beating until thick and glossy. Fold 1 /4 of the whites into chocolate batter; gently fold in remaining whites.
4. Fill souffle dishes about halfway with chocolate batter. Place frozen chocolate cube into center of each; add remaining batter, filling almost to the top. (The cakes can be made ahead up to this point and refrigerated 4 hours.) Bake until cakes are puffy and set, about 18 minutes. Loosen sides of cake from the souffle dish using knife; invert onto serving plate. Repeat with remaining cakes. (Do not let cakes cool completely in the souffle dish or bottom will stick.) Sift cocoa over top; serve with ice cream or custard sauce as desired.

Chocolate Delight
Prep Time: 30 minutes
Yield: 20 servings
1 (18 1/2-ounce) package devil's food chocolate cake mix
3 (3 1/2-ounce) packages instant chocolate pudding mix, regular or sugar free
2 cups whipping cream
2 tablespoons confectioners' sugar
Chocolate sauce or syrup, any variety, for garnish
1 cup chopped pecans, lightly toasted
Prepare the cake mix according to package directions and bake in a 13 by 9-inch pan. Let it cool thoroughly, then cut the cake into cubes about the size of walnuts.
Prepare the chocolate pudding according to package directions.
In a medium bowl, whip the cream with the sugar until stiff.
To assemble: In a trifle bowl, layer half the chocolate cake cubes, pudding, whipped cream, chocolate sauce or syrup and nuts. Repeat, layering the remaining ingredients, ending with whipped cream and nuts. Drizzle decoratively with chocolate sauce or syrup.

This is my family favorite.
SOUR CREAM CAKE
1 and 1/2 oz. chocolate
1/4 cup margarine
1/2 cup water
1 cup flour
1/2 tsp. salt
1 cup brown sugar
3/4 tsp. baking soda
1 egg
1/2 tsp. vanilla
1/4 cup sour cream
Melt chocolate and add margarine and water. Mix dry
ingredients together. Add to liquid. Add egg and vanilla.
Stir in sour cream. Bake in 350 oven.
This is an 8x8 cake. You can double it easily.
Frost with Milk Chocolate Frosting
1/4 c. Crisco
1/3 c. cocoa
1/3 c. milk
1/4 tsp. salt
1 & 1/2 tsp. vanilla
3 or more c. powdered sugar
Mix in mixer till right spreading consistency.

I'm a good cook...but I have to tell you, I've have never had a homemade cake that tastes any better than a Betty Crocker Cake mix. You can doctor it up 100 ways, from adding Carmel and nuts to make a turtle cake to adding cream cheese and powered sugar to make a mud cake.
