Thai noodle soup

Serves 6



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
2 tsp sunflower oil
1 small garlic clove, chopped
a pea-sized piece Thai shrimp paste (blachan)
2 lemongrass stalks
2 kaffir lime leaves - or strip of pared lime rind
1.2 litres/2 pint fresh chicken stock
75g/3oz dried medium egg noodles
2 tbsp Thai fish sauce
1 lime, juice only (about 2 tsp)
½ medium-hot red chilli, seeded and finely chopped
2.5ml/½ tsp light muscovado sugar
50g/2oz fresh spinach or pak choi, cut into 2.5cm/1in wide strips
a handful fresh coriander leaves



Method
1. Heat the oil in a large saucepan.
2. Add the garlic and shrimp paste and fry gently over a medium heat for 1 minute.
3. Meanwhile, lightly crush the lemon grass stalks with a rolling pin or the blade of a large knife.
4. To make the soup add the lemon grass, kaffir lime leaves and chicken stock to the pan, bring to the boil and simmer for 10 minutes.
5. Meanwhile , drop the noodles into a pan of boiling water, remove from the heat and leave to soak for 4 minutes, before draining.
6. To refine the soup, strain the stock through a fine sieve into a bowl, return to the pan and add the fish sauce, lime juice, red chilli and sugar.
Simmer for 3 minutes.
7. Add the egg noodles and spinach, or pak choi and simmer for a further 30 seconds.
8.Finally, ladle into bowls, dividing the noodles equally between them and scatter over the coriander leaves.

It depends what mood that myself and my family are in.

CHICKEN CHOW MEIN

175g (6oz) egg noodles
Salt and pepper
175g (6 oz) onions, peeled
225 g (8 oz) skinless chicken breast fillets
225 g (8 oz) Chinese leaves
30 ml ( 2tbsp) oil
30 ml (2tbsp) sesame oil
2.5 ml (1/2 tsp) chilli powder
175 g ( 6oz) bean sprouts
225 g (8 oz) cooked peeled prawns
1 garlic clove, crushed
30 ml (2 tbsp) soy sauce
30 ml (2 tbsp) dry sherry

You can replace the chicken and prawns with 450g (1lb) steak, pork or lamb fillet.

My whole family eats this all the time well once a week. And I do dinner parties as well. I can also leave the meat out and replace it with more seafood items.

This goes down well with all ages, me 33, husband 41, kids 7, 12,
Then you have your Nana, grandads, mums, dads, friends, and their children.

It is so quick and easy to do!

this is my fav noodle dish.....
1/2 pound extra wide noodles- boiled
1 stick margarine
1 pound fresh mushrooms-sliced
several green onions -chopped
1/2 red,yellow,or orange bell pepper-chopped
1/2 green bell pepper-chopped
1T dried chives
1t garlic powder
1/2 t seasoned salt
fresh grounf black pepper to taste
1 8 oz pkg cream cheese
1 16 oz tub sour cream
2/3 c parmosean cheese
2 T milk

i lg fryin pan melt matgarine... add grrn onions and peppers cook an stir 5-7 min add mushrooms cook 10 min more toss noodles in add spices toss lightly add cream cheese sour cream and parmosean cheese stir an cook til hot but DO NOT BOIL....... add milk if to dry...serve this with pork or chicken or steaks with a fresh fruit salad an choc pudding fer dessert.

it depend on the side dish that i am going to eat along with the noodles, but one of my favorite dishes is the vegetables noodles along with beef chow fun.

Singapore Mai Fun,you can order it at most Chinese restaurants.It has strips of pork,chicken,shrimp and vegetables with thin noodles seasoned with some curry spices.
